DIY Gluten-Free Pizza Night

Like most families, we have a fun meal once a week. For my kids, it’s nearly always pizza because it’s as much fun to eat as it is to create! Of course, any meal that I can turn into a fun evening with the kids, I’m always in, and this is one meal everyone eats without complaints.

Since switching my son’s diet to gluten-free a few years ago, I’ve had to be on the quest to find gluten-free substitutes that he’ll enjoy eating and not feel like he’s missing out. In the case of pizza, we recently discovered Freschetta’s Gluten-Free Pizzas, and I’m happy this is one gluten-free pizza the entire family loves to eat!

The thinner, crispy crust is one that’s irresistible and most nights, we make it a game to pile on the toppings and customize them. Since the baking temperatures are different for regular and gluten-free crusts, it’s much easier for me to purchase Freshetta’s Gluten-Free pizzas and make one kind for everyone.

The fun begins just before baking, where each of my kids selects the toppings they want to customize their pizzas with! When we start with the gluten-free cheese, piling on the toppings is quite easy. And, because it’s a Friday night, this is a great way for me to add veggies that need to be eaten from the week!

My youngest, the meat lover, likes to add black olives to his pizza, and since my daughter is also a big fan of the black olive and pepperoni combination, they work together to customize their pizzas. For these two, I buy the gluten-free pepperoni and start there. It’s always about who gets more sliced olives on “their half of the pizza” Ha!

Because Freschetta’s Gluten-Free pizzas are available nationwide, enjoying pizza night is quite easy no matter where you live. We were able to enjoy a family pizza night on a recent vacation trip to the beach, and it made for a really fun pizza and movie night in our condo when the kids were tired from a few days in the sun and just wanted to relax and watch a movie.

While it’s only my son and I that eat gluten-free at our house, it’s nice to have found one great-tasting gluten-free pizza everyone else enjoys eating.

    We love pizza night! Customizing pizzas makes it more fun and an event the family can enjoy together in the kitchen while talking about the day and the weekend to come! We add extra pepperoni, mushrooms, and pepper slices. When we want to add some spice we add hot pepper and a few black olives! Yum!

    My Celiac daughter loves to slice fresh tomatoes to put on top–all different colors from our garden. My son wants more colors of cheese. My husband and I like to add fresh herbs, spinach or broccolini, and some sliced Applegate pepperoni.

    Every now and then if time permits on a day off work i make crust and all, but most time it’s frozen pizza for pizza night. I usually add to a cheese or pepperoni pizza. Onion, spinach, basil, black olives, bacon, banana peppers-just depends what is in the fridge! Never had the GF frozen pizza have always made my own GF crust when going that route. Would love to try it!! I try to eat GF as much as possible, but it’s been hard to make a total switch.

    I’ve just discovered how much I love black beans and guacamole on my pizza! My husband and son will gladly stick to their all meat pizzas with some occasional pineapple. 🙂

    I’m afraid we are in a variety rut! We just love pepperoni and nothing beats it! I just make sure we have extra sauce on hand for dipping the slices in!!

    Hi!
    We love all types of mushrooms on our pizza. Enoki, shiitake, cremini, oyster, button; and yesss, all at once!! Pesto sauce with some pine nuts sprinkled on top makes this little added crunch even creamier.

    I always make 2 pizzas, one with all the meats, we add pepperoni, canadian bacon, and extra cheese. On the other would be any veggies I have on-hand like bell pepper, onions, turkey pepperoni, and spinach or broccoli 🙂

    we have been making pizza topping casserole – So good!!! So easy!! But as for Regular pizza, my son & DH love black olives & peppers. my daughter & I like tomatoes & garlic & pineapple (not all together) 😉

    We love pizza too but in the summer when it is hot, no one wants to turn on the ‘big hot thing’ (oven). So we take our pizza to the grill. We have not tried frozen pizza on the grill yet but there are still a few more days left of summer. We start with crusts (the GF one is always cooked first) and add all sorts of vegetables and meat. We really like spinach. onion, pepperoni and bacon. My hubby and I like more vegetables than meat but the kids prefer their protein. We also like pesto sauce instead of tomato sauce sometimes. It is making me hungry typing this. 😉

    We put out a bunch of toppings and let everyone make their own section of the pizza. The kids love choosing what they eat and will often try things on pizza that they wouldn’t normally eat. Some toppings we use are onion, pepper, mushrooms, ham, pepperoni, sausage, feta cheese, cheddar, shredded chicken, or even broccoli.

    We customize each quarter for each person. Black olives was a favorite for awhile, pepperoni for my little guys and my husband likes grilled chicken!

    We add turkey pepperoni or turkey sausage to premade cheese pizza reducing the amount of fat and it is less greasy.

    After being diagnosed with Celiac 16 years ago, I resigned myself to making pizza from scratch in order to get a good GF pizza. None of the prepared pizzas were good enough to enjoy until I tried Freschetta a little over a year ago. Man is this pizza good! Even my boys and my husband agree it tastes like gluten filled pizza. I like to have one in the freezer in the event I do not have time to make pizza from scratch. I usually add olives and roasted vegetables to my pizza; however a nice assorted mushroom pizza is excellent too with portabello, domestic and shitake mushrooms. Saturday night is pizza night for us every week so we mix it up a bit each time.

      I totally get having to make your own gluten-free items in order to find a recipe the whole family can enjoy… but man, oh man isn’t it nice when you find a product everyone loves that saves us time? Your mushroom pizza sounds amazing!!

    We make little checklists and each person marks what they want for their pizza and then I put together dishes containing each person’s requested toppings and they put them on top of their pizza. It makes it fun, plus everyone loves their meal and there is no picking things off and wrinkled noses!

    Yes I co customize pizza when I make it at home and it usually is a vegetarian pizza with vegetarian meat substitutes; my favorite toppings are black olives and mushrooms. Thanks for the chance 🙂

    We generally just eat the frozen pizzas as they come out of the box. The assortment is so wide that you can generally get whatever combination you like. The one thing we always cook when we make frozen pizza is tater tots. They go great together.

    Pizza parties are the best. When my kids have friends over for sleepovers we all customize our own pizzas. They love it and have a lot of fun doing it. The topping combinations get crazy!

    We add italian spices, salt, lots of salt and extra cheese. There is a local pizza shop that puts coarse salt on the bottom of their crust so we started doing this and it brings out the flavor.

    This is a great idea! I never thought of adding extra ingredients to a frozen pizza. I would add hamburger meat and bacon to cheese pizza for my meat loving little guy!

    I do have to customize our pizzas. My hubby is a meat lover so I add sautéed ground meat (small meatballs will also work) on his pizza along with sausages and thinly sliced onions
    For myself and my son, I like to add extra cheese, bell pepper and mushrooms
