Blueberry Pancakes From Mix
While my homemade pancake recipe is my weekend go-to, I keep a box of mix in the pantry for my husband and teens, so they can whip up breakfast on their own when I’m out on a run.
These blueberry pancakes use a complete pancake mix, and just like in my banana pancakes with a mix, and my pumpkin pancakes. Here, you’ll find notes for non-complete mixes and how to cook them to perfection.
Best Mix to Use
I love the simplicity of a complete pancake mix, where all you have to do is add water. If your mix is not marked as “complete” where you need to add eggs and milk, this recipe still works. Just add the right amount of blueberries per cup.
I’ve tested this recipe with Hungry Jack Complete, Great Value (Walmart’s Brand) Complete Mix, Pearl Milling’s Complete, Krusteaz Buttermilk Complete, Bisquick, and a couple of the fancier organic mixes I’ve found on Amazon.

How Many Blueberries To Add Per Cup of Mix?
Regardless of the pancake mix you’re using to make this recipe, here is a helpful chart with the amount of blueberries to add to the batter:

When to Add the Blueberries to Pancake Mix
Once you’ve mixed the pancake mix ingredients in a large bowl and your batter is ready, you’ll add the blueberries and, using a spatula, gently fold them in.

How to Keep Blueberries From Burning In Pancakes
By adding the blueberries to the batter instead of sprinkling them on top of the pancake once it’s on the pan, they’ll get a thin coat of pancake batter, which protects them from direct exposure to the heat in the pan and prevents them from burning.

Blueberry Pancakes with Pancake Mix

Ingredients
- 2 cups complete pancake mix
- 1 ½ cups water
- 1 cup blueberries
Instructions
Make the batter:
- In a large bowl, combine the pancake mix with cold water. Let the batter sit for 5 minutes. This helps the dry ingredients absorb the liquid, resulting in a consistent batter that yields great pancakes from start to finish.
- Add the blueberries to the batter and gently fold them into the batter.
Cook the pancakes:
- Heat a large non-stick pan or griddle over medium heat. Once hot, grease it with oil, butter, or spray. Immediately pour ¼ cup of batter per pancake, ensuring that there's an even amount of blueberries in each. Cook the first side for approximately 2 minutes, then flip the pancakes over and cook the other side for an additional minute or two. Avoid pressing down with the spatula.
- Remove the pancakes from the pan and serve them immediately, or keep them warm while you repeat the process with the remaining batter.
Store:
- Refrigerate unused batter, covered, for up to 2 days. Let it come to room temperature on the counter before cooking. Cold batter is thick and difficult to pour. Store leftover cooked pancakes in the fridge in an airtight container for up to 3 days, or freeze them for up to 3 months.
