What if I told you that you could make a complete breakfast in 45 seconds? The type of breakfast that your family will be asking for again and again? These breakfast tacos with turkey sausage and pineapple salsa are easy to eat and make.

This week, I’m working with Jimmy Dean to create this quick and easy breakfast hack. The hack comes into play by using fully prepared fresh food items to fill the tacos, like pre-washed spinach, fresh pineapple chunks, and pico de gallo.

Together, Jimmy Dean and I created this fun 45-second cooking show video that demonstrates that the tacos really only take 45 seconds to assemble. Everyone has 45 seconds to make a complete breakfast, right?

If your household is like mine, the mornings can be very hectic. So much, that making a full breakfast is usually out of the question unless I have pre-made, homemade waffles or pancakes in the freezer. But, those don’t have fruit and veggies built in… and these tacos do!

Both my husband and Jaime have declared these tacos a winning recipe and they’ve already requested it twice in one week! He said, and I quote, the savory from the sausage, the sweet from the pineapple, and a little bit of heat from the pico make this a terrific combination!

Making the pineapple salsa is nearly instant when you use some quick kitchen hacks, like using freshly prepared ingredients. This quick hack can save one a lot of time and help us eat better.

Another reason I like this breakfast is because the sausage adds the protein I often don’t have time to make. I can’t make eggs every morning when we are rushing out the door. And, when given the option of a carb-filled breakfast to a complete one like these breakfast tacos, I rather opt in for a breakfast that is high in protein to keep me filled longer.

Making these breakfast tacos was fun and easy. Since the sausage was fully cooked it made this breakfast ultra convenient for those days we are in a rush or when everyone seems to be going in their own direction. It is a must to have something on hand that can be made into a full meal and is super quick for my family.

Ingredients
  

  • 1 cup pico de gallo
  • 1 cup diced fresh pineapple
  • 2 cups baby spinach, chopped
  • 8 fresh corn or flour tortillas
  • 1 box of Jimmy Dean Fully Cooked Sausage Patties, any variety

Instructions
 

  • In a medium bowl, combine pico de gallo with diced pineapple.
  • Place baby spinach onto flour tortillas, top with a heaping tablespoon of fresh pineapple salsa.
  • In the microwave, heat up fully cooked sausage for approximately 45 seconds, following package directions.
  • Place heated sausage patties onto tacos, either cut in half or whole, fold, and serve immediately

    We like making breakfast burritos. Scramble 4-6 eggs, add 1 c. frozen breakfast potatoes, cheese, and diced breakfast sausage. Spoon egg mixture (3/4 c) into a large tortilla, top with cheddar cheese and prepared salsa. Totally delish!

    We make homemade “McMuffins”: scramble some eggs and pour into a muffin tin and bake until set. Put the egg, a slice of cheese, and a sausage patty on an English muffin. You can eat right away or make up a big batch, wrap each one and freeze for later!

    I love crumbling up one sausage patty in a microwave safe bowl, crack in an egg, and tear up a piece of bread in chunks and mix all together in the bowl, then microwave 1-2minutes until egg is set. Ta-da! Easy, satisfying, soft scramble breakfast that everyone loves in my house:)

    Our favorite breakfast meat is Sausage! For a quick meal during the week we like to eat pigs in a blanket. (sausage links wrapped inside a pancake). YUM! For holidays, i put ground sausage into egg caseroles. We LOVE sausage!

    I love turkey sausage browned then add salsa and then crack a egg on top, cover and cook egg to your liking. It’s wonderful! I added feta cheese to the top last time.

    We often prepare breakfast sausage with eggs and Obrien potatoes on the weekends. I love the convenience of the pre-cooked products during the week and the chicken sausages by Jimmy Dean are equally as good as the turkey.

    Turkey sausage crumbled in individual frittatas baked in muffin times, with egg, spinach and cheese. Prepared in one batch on a Sunday, and on hand for weekday breakfasts. Always on the search for new staples to replace sugary breakfast foods, and on the quest for pairings to bring veggies into the mix.

    Like the pineapple salsa idea to swap out syrup, and my girls can prep that themselves now. The taco trucks are adorable!

    What a cool idea to make breakfast tacos out of this sausage! It only ever occurred to my to use chorizo for breakfast sausage and tacos. My favorite way to eat breakfast sausage (and I will admit, I almost always buy Jimmy Dean’s) is with syrup on top. The recipe really inspires me to get creative! I love the idea of getting the sweet from pineapple instead of syrup. Much healthier!

    We have little egg rings that sit in the skillet to contain the (scrambled or not) egg, while it fries. They’re just slightly larger than an English muffin. Fry/reheat the sausage at the same time, and pop the English muffins in the toaster. Cheese, ketchup, salsa are all optional. Homemade Egg McMuffin!

    Those tacos look great and the trucks make it fun for the kids! We usually have ours the old fashioned way, with eggs and hash browns or with homemade biscuits and gravy.

    At my house, we like to use the sausage as the bun. If the sausage patties are thick enough (sometimes I make my own) we cut them in half. Then I make a small omelet with spinach and mushrooms and we cut that into pieces and everyone gets some omelet “sandwiched” in between two pieces of sausage patty. I keep wax paper bags on hand to put them into to help prevent greasy fingers if breakfast has to be eaten on the run. =)

    This is hard. But my favorite healthy way to eat sausage is layer with a sausage patty on the bottom, then a smear of homemade mayo, a fried egg and slices of avocado on top! It’s like an egg sandwich without the bread! Delish!!!!!

    My favorite quick way to make sausage in the morning is in a breakfast sandwich of bread cheese egg and ready to eat sausage. I love the breakfast sandwich maker I got for Christmas. Sometimes vegetables even make it in there!

    Nothing too fancy here when it comes to sausage, usually just patties or links with eggs and or occasionally on a whole wheat English muffin with a fried egg and a slice of cheese. Also love sausage gravy with biscuits, but since I don’t make it like my grandma did, I don’t. Love the taco idea though as we all love tacos in this house and we love the turkey sausage too.

    I guess I don’t eat too much breakfast sausage because I tend to think of it is a “bad” food. With fillers and fat. But when I do buy it, I like to make breakfast burritos or use some in chili. I also use in in making breakfast casserole dishes. I love those taco trucks!

    Our favorite way to eat breakfast sausage is on a breakfast quesadilla. I cook sausage, hash browns and eggs the night before and put them in containers in the fridge and in the morning I take out flour tortillas and put them on a cookie sheet (one for each family member). (Put a little olive oil on the back of the tortilla.) Each family member can then add whatever they like to his or her quesadilla. I always sprinkle a little cheese on first and then my husband loads up on the sausage, egg, onion and spinach. My little ones usually just want egg and cheese (I will sometimes throw on a spinach leaf!) Then you throw it in the oven for a few minutes on 375/400 degrees. When you pull it out you just fold the tortillas in half, cut with a pizza slicer, throw them in a baggie and everyone is on their way with breakfast!!

    My favorite way to eat sausage is in our breakfast casserole with sausage, bacon, cooking cream, breakfast potatoes and cheeze. It takes more than 45 seconds to make though, so this recipe might become our school day favorite !

    Favorite way to eat sausage breakfast is with toast and eggs.
    But you can also chop and use for stir fried rice for lunch and add in the pasta sauce for and easy spaghetti dinner.

    I sprinkle crumbled sausage on the waffle iron right after I pour the waffle batter, then close it up and cook. It smells wonderful and my kids and husband love it! Great as leftovers, too. I freeze them and it’s a quick weekday breakfast.

    What yummy idea, looking forward to trying with my guys! We like sausages with pancakes or French toast, they taste so good with some syrup on them. I’m glad to see turkey sausage as I can’t eat pork products. Love to the taco trucks, would really help our son, his motor skills aren’t great (he is autistic) and he finds it hard to pick up the taco from his plate without losing the insides.

    I love breakfast sausage as a sweet potato hash. Cook meat remove from pan and add chopped sweet potatoes and applies to pan the season how you wish and add meat back.

    My family love breakfast sausage and I love to use the already cooked Jimmy Dean brand because there is no guessing if I have cooked it long enough and it is so fast and less mess to pop it in the microwave. Our favorite way to eat breakfast sausage is while camping we throw it on the campfire skillet with the rest of the food and the flavor spreads on everything. So delicious!

    My favorite way to eat sausage is with my extended family! Although my two kids love sausage in any form (plain and in gravy being favorites), I can’t think of sausage without thinking of my 7 and 5 year old nephews, who are quite picky, but gobble sausage up for any meal! I can’t wait to share this recipe with them when we’re together again in a few weeks.

    I love pre-making mini quiches in muffin pans for quick reheat from the freezer. Sausage egg spinach. Sometime I’ll add mushroom, cheese, onions, etc. Oh my goodness those taco trucks are ADORABLE!!!

    Let me count the ways :)…in a good biscuit, crumbled up in gravy, sandwiched between waffles or pancakes with syrup. Having breakfast for supper is my favorite!!!! And Jimmy Dean is the BEST sausage in my opinion-their maple flavor sausage #1. This is an awesome idea-trying it this week!

    We love sausage when it’s in breakfast casserole! We all eat it up. Yum! I’m thinking I’ll make the pineapple salsa next time we have tacos…pico and pineapple? How easy is that!     When we eat breakfast sausage I usually make a scramble with eggs, mushrooms, onion, peppers and sometimes sauteed spinach….in a tortilla with an avocado slice…..I’m really liking this pineapple salsa idea though, I think it will be a hit. I might also try mango salsa too, yum

    My DD is a simple eater, nothing fancy, nothing messy that will squeeze out or fall apart. Simple waffles instead bread for her sausage breakfast sandwiches. Fruit on the side and an icy cold drink is all she needs.

    I love sausage in burritos mixed with eggs, salsa and cheese. It’s a great way to get protein that keeps me full along with some veggies in the salsa. My mom made these for us when we were in high school and would freeze them so they were easy to heat up as we were running out the door to go to school.
