Pancakes with Cinnamon Toast Crunch Cereal
My teen loves the crunchiness of my granola pancakes, so when she asked me to make “Cinnamon Toast Crunch Pancakes she saw on TikTok, I knew this recipe will also nail it.
It's not the first time I've been recruited to re-create something viral; these air fryer pancakes were a previous request, and they've been a hit ever since.
Ingredients
You’ll need pancake mix or my basic pancake recipe for the base. Cinnamon to flavor the batter, and crushed Cinnamon Toast Cereal as a mix-in and topping.
How to Make Cinnamon Toast Crunch Pancakes
You’ll find the printable recipe and my tested notes below. Here is an overview:
- Start with already mixed pancake batter in a bowl. Then, you’ll add semi-crushed Cinnamon Toast Crunch cereal and cinnamon. Fold them gently into the batter, and it’s ready to be cooked.
- Cook the pancakes on a greased, hot non-stick pan over medium heat. Hot enough to get nice and golden, not too hot that the outside cooks so fast you flip them too soon, and the batter is still raw. They take 90 seconds to 2 minutes per side. If the pan gets too hot, rinse it under cold water between batches.
- Serve them, stacked high, with a little more Cinnamon Toast Crunch on top and a drizzle of syrup for pancakes.

How Small Should The Cereal Be Crushed?
Measure the cereal, place it in a zip bag, and crush it with your hands until it’s a mix of sizes. Some big, some small, will give you the most variety.

Cinnamon Toast Crunch Pancakes With a Mix

Ingredients
- 2 cups complete pancake mix
- 1 ½ cups water, check your box amount can vary by brand
- 1 cup Cinnamon Toast Crunch cereal, lightly crushed
- 1 teaspoon cinnamon
Instructions
Make the batter:
- In a large bowl, combine the pancake mix with cold water. If your pancake mix requires eggs and milk, follow the measurements in the back of the box using 2 cups of mix. Let the batter sit for 5 minutes. This helps the dry ingredients absorb the liquid, resulting in a consistent batter that yields great pancakes from start to finish.
- Add the cereal to a zip bag, seal it, and use your hands to lightly crush the cereal pieces. Empty the bag into the batter bowl, add the cinnamon, and use a spatula to fold them into the batter gently. Mix just enough to distribute the cereal and the cinnamon.
Cook the pancakes:
- Heat a large non-stick pan or griddle over medium heat. Once hot, grease it with oil, butter, or spray. Immediately pour ¼ cup of batter per pancake, ensuring that there's an even distribution of cereal in each pancake. Cook the first side for 90 seconds to 2 minutes, then flip the pancakes over and cook the other side for an additional minute or two. Avoid pressing down with the spatula.
- Remove the pancakes from the pan and serve them immediately, topped with a little more Cinnamon Toast Crunch and a little pancake syrup. Or, keep them warm while you repeat the process with the remaining batter.
