These Oreo pancakes are pillowy soft with chocolatey Oreo cookie pieces in every bite. Whether you're making them for a birthday breakfast, sleepover, or just because, they're guaranteed to disappear fast.

Oreo Cookie Stuffed Pancakes

One year, my daughter asked for Oreo pancakes for her birthday breakfast, and they became an instant hit. This recipe uses the same batter as my fluffy homemade pancakes, which hugs the crumbled Oreo pieces perfectly. The result is a soft, lightly sweet pancake with cookies in every bite instead of just sprinkled on top. You’re going to love them.

Ingredients

The batter is made with traditional pancake ingredients like flour, baking powder for a fluffy texture, sugar to sweeten, and salt. Any milk you have on hand works; an egg to bind the ingredients; melted butter; vanilla, and Oreo cookies for the signature cookies-and-cream flavor. If you're short on time, you can also use your favorite pancake mix instead; the recipe card shows you how.

How to Make These

  1. Make the pancake batter.
    Mix the dry ingredients first, then add the wet ingredients and stir just until no dry flour remains. Overmixing can make the pancakes chewy instead of fluffy.
  2. Fold in the Oreos.
    Break the cookies into small pieces by hand instead of crushing them into fine crumbs. This keeps the batter lighter in color and gives you soft cookie pieces throughout every pancake. Let the batter rest for 5 minutes before baking so the cookies soften slightly.

  1. Cook the pancakes.
    Heat a lightly greased skillet or griddle over medium heat and pour the batter, making sure each pancake gets plenty of Oreo pieces. These take about 2 minutes per side.

  1. Serve warm
    Serve the pancakes right away or keep them warm in a 200°F oven while you finish the batch.

These pancakes are delicious with butter and maple syrup, but if you're leaning into the cookies-and-cream theme, top them with whipped cream, chocolate syrup, Oreo cookies, or a dusting of powdered sugar.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • ½ teaspoon salt
  • 1 ¼ cups milk, any
  • 1 egg
  • 3 tablespoons butter, melted and cooled
  • 2 teaspoons vanilla extract
  • 12 Oreo cookies, broken up into small pieces

Instructions

Make the batter:

  • In a large bowl, combine the flour, baking powder, salt, and sugar. Make a well in the middle and pour the milk, egg, melted butter, and vanilla extract. Break up the egg first with a fork, then mix it with the liquid ingredients, and then combine it with the flour, working from the outside of the bowl in, until just combined and mostly smooth. Stop mixing when you no longer see flour to avoid chewy pancakes.
  • Break up the Oreos into small pieces in a bowl. Crushing them or breaking them up a lot will create Oreo "dust" which will make your batter grey. It's not a big deal, but for a whiter pancake with pieces inside, I crush them by hand and minimally fold them into the batter. Add the Oreos to the batter and gently fold them in. Let the batter sit for 5 minutes so the Oreos can soften a little before cooking.

Cook the pancakes:

  • Heat a non-stick griddle or large pan over medium heat. Once hot, grease, spray, or melt butter on the hot surface. When using an electric griddle, heat it somewhere between 300 and 350F.
  • Immediately, pour ¼ cup of batter onto the greased surface, making sure to distribute an even amount of Oreo pieces in each pancake. The batter is thick, so use the back of a spoon or the scoop to shape it into circles. Cook the first side for about 2 minutes, until the edges begin to look defined and bubbles form. Flip the pancakes over and cook the second side for a little less time.
  • Remove the cooked pancakes from the pan and repeat the process with the remaining batter. If using a pan, rinse it between batches to prevent burnt pancakes. Serve the pancakes as you go or keep them warm on a plate, covered with a kitchen towel, or on a sheet pan in a 200F oven.

Serve:

  • Plate a few pancakes, then top them with your favorite toppings and syrups. Whipped cream, chocolate syrup, and crushed or whole Oreos on top go great here!

Notes

Using a pancake mix: measure out 2 cups of dry pancake mix and follow the box instructions to make the batter. You can add the vanilla extract for added flavor. Once the batter is mixed, add the 12 broken Oreo cookies and follow the rest of the recipe.
