Peppermint Ice Cream Sandwiches with Dreyer’s

Are you looking for a fun holiday treat to make with your kids? Combining two of my daughter's favorite desserts into one, chocolate brownies and anything peppermint, I’ve created what she referred to as a “dessert masterpiece!”

My daughter was telling our exchange student how awesome an ice cream sandwich made with brownie batter could be. Jaime, a native of Spain, didn’t grow up eating brownies and he thought this would be a terrific idea (he is now a big fan of American brownies).

To create this recipe, I’ve partnered with Edy’s Slow Churned Light Ice Cream. To make it festive, Sofia decided to use the Peppermint Wonderland flavor -a new favorite since we used it in our Candy Cane Shakes. Of course, this recipe works great with other Edy’s Slow Churned Light Ice Cream flavors like Vanilla, Chocolate, or Caramel Delight since Peppermint Wonderland is a limited edition holiday flavor

What I love most about creating holiday treats is that I get to spend more time with my kids in the kitchen, making recipes they love, and that earn me the “best mom ever” award. I’m pretty sure our exchange student already thinks he hit the jackpot by living at our house when it comes to food!

For this recipe, Sofia took an interest making it with me and happily volunteered to show you how easy it is to make in this video.

While the recipe is super easy to make, it’s one that takes a little time since you have to wait for the brownies to cool down and the “sandwiches” to set.

Whether you use store bought brownie mix or use my recipe below, the process is the same. I use the brownie recipe below, so I can make these sandwiches gluten-free by using an all-purpose gluten-free flour mix.

Of course, the best part is taking the ice cream sandwiches out of the freezer and slicing them. While I noted that you should slice them into ten sandwiches, I often cut it into more pieces. What I love most is the creamy, rich consistency of Edy’s Slow Churned Light Ice Cream around the edges when I slice them off the tray.

With this recipe, you are guaranteed to make your holiday treats more fun. Don't forget, if you are located west of the Rockies to look for the Dreyer's carton in the freezer aisle.

Peppermint Ice Cream Sandwiches with Dreyer's

Ingredients

  • ½ gallon Edy's Peppermint Ice Cream
  • Favorite Brownie Recipe

Instructions

  • In a large bowl, combine your brownie ingredients until you have a smooth batter.
  • Divide brownie batter evenly into both lined pans. Bake in a preheated oven for 12-14 minutes, until a toothpick comes out clean. Allow brownie pans to cool down completely.
  • At this time, bring peppermint ice cream out of the freezer to soften.
  • Remove one brownie from the pan onto a cutting board by gently lifting the parchment paper. Cut the brownie into 10 rectangles by cutting it once across the middle and then into vertical strips. Cut away any crispy edges.
  • Remove the lid from the ice cream carton and using a serrated knife, cut the entire carton in half lengthwise. Peel off the carton and set both halves on top of the whole brownie that is still inside the pan. Ice cream should be soft enough, but not melted, that you can spread it over the brownie evenly.
  • Top peppermint ice cream layer with brownie rectangular pieces. Cover, and freeze for about 4 hours.
  • Once frozen, remove from freezer and lift base parchment paper out of the pan and onto a cutting board. Trim the edges with the serrated knife, follow the pre-cut tops, and cut the bottom brownie pieces.
  • Serve or wrap each brownie piece in parchment paper and freeze.
