Apple Oat Blender Pancakes
If you enjoy hearty oatmeal pancakes filled with juicy tidbits of fruit inside, you’ll love these apple oat blender pancakes.
The batter isn’t as sweet as my banana oatmeal pancakes, which is totally fine because the cinnamon apple topping added into the batter takes it to the next level delicious. If you want to up the protein in your stack, you could also make these oat & cottage cheese pancakes and mix in the apples!
Ingredients
You’ll find the amounts to make these apple oatmeal pancakes in the recipe card. But, before you make substitutions that can alter the outcome of your stack, here are the swaps I’ve already tried:
- Apples: the star of the show! Granny Smith (green) apples are recommended, although Fuji or Honeycrisp work well too.
- Cinnamon: infuses the apples with flavor and carries on to the batter.
- Butter: a little in the batter to add moisture and a bit to cook the apples. You can use a neutral oil instead.
- Brown sugar: a little for the apples and the batter. You can use granulated white sugar if you’re out.
- Milk: dairy milk or dairy-free will work for this recipe.
- Eggs: to bind the ingredients and help the pancakes hold together. Using an egg substitute for pancakes will impact the texture, but it can be done.
- Old-fashioned oats: the larger flakes are essential. If using quick oats, the batter will be a bit runnier, add 2 additional tablespoons.
- Baking Powder: essential if you want these pancakes to be fluffy.
- Salt: to enhance the flavor of the other ingredients.

How to Make Apple Oatmeal Pancakes
Making these is quite simple and I’ve got some tips for you. I like to make this blender pancake recipe in the following order to ensure success:
- Prep
I recommend dicing your apple into small pieces; you could also grate them, so they soften up quickly. - Make the cinnamon apples
You want to cook down the apples with the cinnamon, butter, and brown sugar for about 5 minutes, just long enough for them to soften up and not turn into jam. - Make the batter
Make sure the liquids are placed in the jar first so you can blend the batter without getting it stuck. - Combine
Combine the cinnamon apples with the pancake batter, either in the blender or in another bowl. - Cook the pancakes
First, heat the pan over medium-high heat. Once hot, grease it with oil or butter. Then, immediately pour about ¼ cups of batter for each pancake and cook them long enough on the first side to see the edges defined and bubbles forming throughout. Flip them and cook the second side for an additional minute. - Serve
Keep the pancakes warm while you cook the rest of the batter or serve immediately stacked high.

What’s great about using a blender for making oatmeal pancakes is that it blends the larger oat flakes with the liquid ingredients into a smooth batter all in one step! This avoids having to make oat flour first and eliminates an extra bowl from clean up!
Success Tips for Fluffy Pancakes
These apple oatmeal pancakes are meant to be thick, fluffy, and delish. Some tips that ensure the right texture include:
Don’t over-blend
Blend long enough until you see a smooth batter and the oats are nearly dissolved. Longer isn’t better.
Heat the pan first
Heat the pan first and once hot, grease it. If using butter, pour your batter immediately after it melts before it browns.
Wait to flip
Knowing when to flip pancakes is as easy as waiting for them to develop bubbles on the top and see defined edges.
Adjust the heat
The best temperature to cook pancakes is under medium-high heat to create golden-colored beauties.
Don’t smash them
Pressing the pancakes down with a spatula will yield dense pancakes and undercooked edges from the batter that oozes out.

Apple Pancake Toppings
These pancakes are full of flavor from the cinnamon apples added to the batter. You can double the batch and reserve half to use for topping, drizzle cinnamon syrup on top, whipped cream and cinnamon, a drizzle of melted peanut butter, or roasted apple slices.
Apple Oatmeal Pancakes (Blender Recipe)

Ingredients
For the cinnamon apples:
- 1 granny smith apple, peeled and chopped small
- ½ teaspoon ground cinnamon
- 2 teaspoons butter
- 1 tablespoon brown sugar
- 1 tablespoon water
For the oat pancakes:
- 1 cup milk, any
- 2 eggs
- 2 tablespoons butter, melted
- 2 cups old-fashioned oats
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 tablespoon brown sugar, or granulated
Instructions
Make the apple topping:
- Heat a large non-stick pan over medium-high heat. Once hot, melt the butter. Add the chopped apples to the pan, and stir, cooking them for about a minute.
- Distribute the cinnamon and brown sugar over the apples, give them a stir, and add the water. Cook the apple topping for 5 minutes, until the apples have softened enough to your liking. Turn off the heat and set aside.
Make the pancake batter:
- Place all the ingredients in the blender in the order listed, making sure the milk is first so the ingredients blend more easily. Blend for 1 minute, until it's smooth and thick. Pour the batter into a large bowl, using a spatula to scrape the sides of the blender to get it all in.
- Gently fold the cinnamon apples into the batter with a spatula until they're evenly distributed throughout the batter. Let this sit in the bowl for 5 minutes to help the oats absorb the moisture. The batter will be thick.
Cook the pancakes:
- Heat a large non-stick pan (or griddle) over medium-high heat. Once hot, grease the surface with oil, spray, or butter. Immediately, pour ¼ cup of pancake batter onto the greased pan, making sure each pancake has some of the apples.
- Cook the pancakes for about 2 minutes, until the edges begin to look defined and bubbles form. Flip the oat pancakes over and cook for another minute on the other side. Make sure not to press them down with the spatula. Remove from the pan, keep the pancakes warm, and repeat with the rest of the pancake batter.
Serve:
- Serve these apple oatmeal pancakes with a little butter, maple syrup, or your favorite toppings.
