Kids are going back to school but it's still hot outside and you need a cool snack for them when they come running in the door all sweaty. Snack time just got more fun with this cereal & fruit frozen bark!

Even though it’s back-to-school for many of us, the temperatures are still quite high after school.After a little outside play, they are hungry and want “something” so that is when I head to the freezer and pull out this easy snack that is full of protein and fruit and with that crunchy texture they love.

To bring you today’s recipe, I’ve partnered with Bitsy’s Brainfood to highlight their organic cereal. This is one snack kids love to eat and make; and once you see how it’s made in the video below, you’ll soon be heading over to your pantry and fridge to make this!

I have two kids that are “dry cereal” eaters, meaning, they don’t like milk in their cereal, but they do enjoy eating it. Often, they’ll request some cereal sprinkled on top of their fruit and yogurt, and this is a great way of eating protein, vitamins and minerals, and choline from Bitsy's cereal. Basically, all the nutrition you’d want from a tasty snack while celebrating fruits and vegetables.

What I love about using Bitsy’s Brainfood cereal is that it is as colorful as it is good for you since it is made with organic vegetables and fortified with vitamins and minerals, so my kids are getting a little extra nutrition with every bite.

While this snack comes together quickly, you do have to wait a little while for it to freeze. Which is why this is something you can easily do the night before or right after breakfast and it will be ready for snack time!

Frozen Yogurt Bark with Cereal and Fruit: the perfect cool snack on a hot day and after school! Quick and easy to make, and it's great to keep in the freezer.

Ingredients

  • 16 oz Greek vanilla yogurt
  • ½ cup blueberries and diced strawberries
  • 2 cups Cereal

Instructions

  • Line a 9×9 pan with parchment paper.
  • Pour yogurt onto pan, spreading it throughout so it is generally the same thickness throughout.
  • Sprinkle blueberries and cereal over the yogurt and freeze for 4-6 hours.
  • When ready to eat, lift the parchment paper away from the pan onto a flat surface and break into pieces. Serve immediately.
  • Kitchen tips: place leftovers back onto parchment paper and freeze immediately. Once frozen, you can transfer the frozen pieces to a zip bag and store for up to a week. After that, the yogurt tends to get freezer burns.
  • I've found the easiest way to cut the frozen yogurt is with a sharp knife, with the frozen bark over a cutting board.
