Chicken Alfredo Made with Cottage Cheese
My family has become a huge fan of my cottage cheese Alfredo sauce, and while it’s already healthy and satisfying, adding chicken turns it into an epic meal that my teens keep asking for on repeat.
It feels indulgent but is secretly lighter, higher in protein, and way easier than it looks. Perfect for busy nights when you still want something creamy and comforting.
Adding Cottage Cheese to Alfredo Sauce
It’s super simple to combine cottage cheese with pasta sauce for a protein boost, whether you use homemade Alfredo sauce or a jarred one. Since you blend cottage cheese, it will incorporate easily into the sauce, adding nutrition and extra creaminess!

How to Cook Chicken for Alfredo
For quick and even cooking, I butterfly chicken breasts before placing them in a hot skillet with a little oil or melted butter. After cooking them for 3 to 4 minutes on the first side, you flip them and cook for an additional 4 minutes.
Once cooked, transfer the chicken breasts to a plate. While the sauce is cooking, slice the meat into pieces. Then, you’ll combine it with the sauce and the chicken, and dinner is ready!
If I’m in a hurry, I use leftover chicken or rotisserie chicken to make chicken Alfredo. It’s a great cooking shortcut that makes an awesome meal too!

While cottage cheese chicken Alfredo can be a complete dinner by itself, I like to serve nutritious side dishes with this meal to make it even more epic! Some of my favorites are steamed green beans, baked frozen vegetables, quick pan asparagus, and this easy side salad. So good!
Cottage Cheese Chicken Alfredo Pasta

Ingredients
- 1 lb chicken breasts, butterflied
- Seasonings for the chicken: salt, pepper, and garlic powder
- 2 teaspoons of oil or butter, for cooking
- 12 ounces pasta
- 1 cup pasta water
- 2 cups milk
- 1 cup cottage cheese
- ⅓ cup Parmesan cheese
- 1 tablespoon cornstarch
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon garlic powder
- 1 teaspoon Italian seasoning, or oregano
Instructions
Prep:
- Cook the pasta by bringing water to a boil. Cook the pasta according to the package directions. Once ready, reserve 1 cup of the pasta water, drain the pasta, and set it aside.
- Place the chicken breasts on a cutting board and pat them dry with a paper towel. Slice them through the middle to butterfly them into 4 pieces. Season them with salt, pepper, and a little garlic powder on both sides.
- Inside your blender jar, place the milk, cottage cheese, Parmesan cheese, cornstarch, salt, pepper, garlic powder, and Italian seasoning. Blend until smooth, stopping the blender to scrape down the sides if necessary. Set aside.
Cook:
- Heat a skillet over medium-high heat. Once hot, melt the butter or heat up the oil. Place the chicken breasts on the pan and cook for 3 to 4 minutes. Flip the chicken breasts over, and cook for another 4 minutes on the other side. Remove the chicken from the pan onto a plate and leave any tidbits on the pan for extra flavor.
- Pour the sauce into a saucepan and heat it up on medium heat, stirring frequently, until it begins to simmer. Reduce the heat to low and cook it for 5 minutes.
- While the sauce simmers, slice the chicken breasts into pieces.
Combine:
- Add the chicken into the pan with the sauce. Add the pasta and toss it to combine it with the sauce -using kitchen tongs makes the job easier.
- The sauce will be thick. Slowly add some of the reserved pasta water and combine it with the chicken and pasta until you have the desired consistency. I usually add about ½ cup.
Serve:
- Serve the cottage cheese chicken alfredo with sprinkled Parmesan cheese over the top.
