It’s true that a pancake mix can be a convenient option for making breakfast in a hurry, but most importantly, it promises perfect pancakes each time by simply adding a couple of wet ingredients.
With this homemade pancake mix, you can DIY a mix with much better-for-you ingredients. In fact, you’ll avoid preservatives and some artificial flavorings when you use this recipe.
And if that’s not enticing enough, making healthy pancakes at home with this pre-measured mix is totally doable!
What to Do If you Run Out of Pancake Mix
If you run out of pancake mix, you can make pancakes at home with just a few simple ingredients: flour, baking powder, salt, and a bit of sugar. Once you mix those dry ingredients, you’ll add the milk, an egg, and butter to create a terrific pancake batter.
Pancake Mix Ingredients
In the recipe card below, you’ll find the amounts of each ingredient as well as how much you’ll need to add to turn it into batter. Here is why each of the pancake ingredients is needed:
- All-purpose flour: the foundation of pancake mixes. Follow this recipe for gluten-free pancake mix.
- Baking powder: a necessary ingredient in all pancake mixes. It gives pancakes their fluffy texture and helps them rise when exposed to heat.
- Sugar: a little is added to each batch to give the pancakes flavor and a golden caramelized exterior when you cook them.

Are Pancake Mix and Batter the Same?
No, they’re not. Pancake mix refers to the dry ingredients in the bag and batter is what you get when you combine the pancake mix with wet ingredients like milk and eggs. The batter is what you cook and turn into pancakes.
Is Pancake Mix Just All-Purpose Flour?
Pancake mix is a combination of flour, baking powder, and salt. Therefore, if you run out of mix, you can’t substitute flour for pancake mix and expect pancakes to turn out. You’ll need to follow a pancake recipe that includes dry and wet ingredient amounts.
How to Make Pancake Mix at Home
I prefer to make pancake mix in quart-sized zip baggies, which are easy to reuse, and they yield 12 pancakes each. Here is the DIY process:
- Prep the pancake mix bags
I use a permanent marker to write down the ingredients that I’ll need to add to the pancake mix when I want to turn it into batter. To make filling easier, line up the bags and flip the tops over to keep the bags open. - Measure and fill
Measuring out each ingredient and filling all the bags before moving on to the next ingredient makes this DIY process go really fast! - Store
Once you’ve filled the bags with the dry ingredients needed to make pancake mix, zip them closed and keep them in the pantry for up to 6months. - Make pancakes from the mix
In a large bowl, you’ll combine one pre-measured bag of pancake mix with the ingredients listed in the bag. Once the pancake batter is ready, cook the pancakes.

How to Thicken the Batter with Pancake Mix
If you added the right amount of ingredients to make pancakes using pancake mix and the batter is too thin, you could add more mix to thicken it. This is a common pancake mistake that happens to the best of us. With this pre-measured recipe, should you overpour milk into the bowl, simply add a tablespoon of all-purpose flour to the batter to thicken it.
How to Store Homemade Pancake Mix

Homemade Pancake Mix for Easy Pancakes

Ingredients
For the DIY Pancake Mix:
- 1 ½ cups all-purpose flour
- 3 teaspoons aluminum-free baking powder
- 1 tablespoon sugar
- ½ teaspoon salt
To make pancakes from the mix:
- 1 ¼ cups milk, any
- 1 egg
- 3 tablespoons butter, melted
Instructions
Label:
- With a permanent marker, write on the outside of each bag the wet ingredients needed to turn the pancake mix into pancake batter.1 ¼ cups milk, 1 egg, 3 tablespoons butter (melted).
- Flip the tops of the zip bags over to hold them open and make an assembly line with the bags. Each bag will make one batch of pancake batter yielding 12 pancakes.
Mix the dry ingredients:
- Fill each bag with the amount of flour, baking powder, sugar, and salt listed above. Mix the ingredients around with a spoon and zip to seal the bag. Filling all the bags with one ingredient before moving on to the next makes this a quick process.
Store:
- Store the bags in the pantry for up to 6 months.
To make pancakes from the mix:
- Empty the pre-measured dry pancake mix into a large bowl. Make a well in the middle and add the milk, egg, and butter. With a fork, break up the egg first, and then mix the ingredients until all visible lumps are gone.
- Heat a large non-stick pan or griddle over medium-high heat. Once hot, grease it with oil or butter. Immediately pour about ¼ cup of pancake batter on the hot surface. Cook for about 2 minutes, until the edges are defined and bubbles form throughout. Flip the pancakes over and cook for one more minute on the other side. Repeat with the remaining batter.
Serve:
- Serve warm with your favorite toppings and pancake syrup.
