This homemade sausage patty recipe is easy to mix, cook, and freeze so you always have a quick, protein-packed breakfast item ready to go.

Homemade Pork Sausage Patties
Once I realized how easy it is to make pork sausage patties from scratch, I stopped relying on the store-bought ones. They come together quickly, can be made in bulk, and freeze beautifully for fast breakfasts throughout the week. I love keeping a batch in the freezer for homemade McMuffins or serving them on the side with fluffy pancakes.
Ingredients
Ground pork is the base for these (you can swap or add half of it for ground chicken or turkey), and they’re seasoned with garlic powder, salt, pepper, sage & thyme (or poultry seasoning), and a little brown sugar (or maple syrup).
How to Make Sausage Patties
Add all the seasonings to a bowl and mix them well. Then add the ground pork and, with your hands, mix to distribute the seasoning evenly. After that, you simply shape them into round balls and press them into a patty. Cook them in a skillet, about 3 minutes per side. Transfer them to a paper towel-lined plate to absorb any excess grease, then serve.

Forming the Perfect Patty
I like to shape them into balls first, then press them flat into a circle. With my thumbs, I gently press down the middle a little so it’s slightly thinner than the edges, helping the patty cook evenly. If you need them to be perfectly round, you can use a 2-inch round circle cutter to shape them.
How to Keep Sausage Patties from Falling Apart
Kneading the ground pork well when mixing it with the seasoning activates a protein called myosin, which helps the meat hold together. This means that if they fall apart, you didn’t knead them enough.
When to Flip Sausage Patties
Depending on thickness, sausage patties only need 2 to 3 minutes per side to cook. When the edges are golden brown on the first side, flip the pork and cook until it reaches 145F.
Storing Freezing Sausage Patties
Once cooked and cooled, you can freeze these in a zip bag for up to 3 months. They thaw quickly, so cooking them is a breeze.
Homemade Sausage Patties

Ingredients
- 1 lb ground pork
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon ground pepper
- ½ teaspoon sage
- ½ teaspoon ground thyme
- 2 teaspoons brown sugar
Instructions
Make the patties:
- Measure and mix the seasonings in a small dish.
- In a bowl, add the ground pork and sprinkle the seasonings over the top. Use your hands to knead the ground meat well, ensuring that the seasonings are evenly distributed. Knead longer than you think you need to; this helps the patties hold their shape and not fall apart.
- Divide the seasoned ground pork into 12 balls. Then flatten each on a board or plate and shape it into a patty. If your patties are on the thick side, use your thumbs to lightly press down the center of each patty to make them slightly thinner, ensuring even cooking.
Cook:
- Heat a large non-stick or cast iron skillet over medium-high heat. Once hot, cook the patties for 2 to 3 minutes per side, until they're cooked through. Transfer the cooked patties onto a paper towel-lined plate and repeat the process with the remaining sausage patties.
Store:
- Cooked sausage patties can be refrigerated for up to 3 days or frozen for up to 3 months in a freezer bag. Reheat cooked patties in the microwave for 30 seconds per side, a little longer if they're frozen.
Notes
- Make these leaner by swapping ½lb ground pork for ½lb ground chicken or turkey.
- Swap the sage & thyme for 1 teaspoon poultry seasoning.
- Swap the brown sugar for maple syrup in equal amounts.
