Everything Bagel Cloud Bread
If classic cloud bread is already a feast for your tastebuds, wait until you try this no carb cloud bread bagel! It’s fluffy, slightly cheesy, and has that incredible flavor we love from Everything but the bagel seasoning.
Whether you want homemade bread for low-carb sandwiches or need a fluffy bread that’s keto, gluten-free, and nut-free, this recipe is for you. It’s easy to make; the only trick is following the steps and not swapping ingredients, or your no-carb bagel may turn out differently than expected.
Since some people find cloud bread taste a little bit eggy, I include stevia, but it’s completely optional. Actually, the stellar flavor here is the bagel seasoning. Bonus: the crunchiness on top of each round. Epic!

How Many Calories Are in Zero Carb Bagels
These cloud bread bagels are very low in calories, with only 38 calories per round, which makes them a great choice for sandwiches or to enjoy with your favorite spreads!
Ingredients
While this no-carb bagel is made with few ingredients, any swap will change the final result. So before jumping to the printable recipe card with the amounts, read what you need and why:
- Eggs: whites and yolks separated.
- Full-fat cream cheese: you need it at room temperature, so take it from the fridge 15 minutes before cooking. Using the microwave to soften it is not a good idea since it will change its texture.
- Liquid stevia: optional to balance the eggy taste.
- Cream of tartar: a must to make the whites hold stiff peaks.
- Everything but the Bagel seasoning: the flavor we are craving for!

How to Make No-Carb Bagels
Don’t let the number of steps stop you from doing these cloud bread bagel! This recipe is pretty simple, you just have to follow the steps to the T and the tips I’m sharing below:
- Prep the oven
While the oven preheats, line two baking sheets with parchment paper or a silicone mat. You can bake one after the other or the two at the same time. - Prep the ingredients
Place the cream cheese on the counter for 15 minutes. Don’t use the microwave to speed up the process; it will change the cheese texture. Separate the yolks from the whites. - Combine yolks and cream cheese
Once the cream cheese is softened, combine it with the egg yolks and the stevia (if using) until you have a smooth batter. - Whisk the egg whites
Make sure the bowl where you place the egg whites is clean of oil or egg yolks (fat keeps the whites from whipping). Whisk the egg whites at medium speed, then at high speed, until they are fluffy and stiff peaks have formed. - Combine
Use a rubber spatula to gently fold the egg yolk mixture into the egg whites until combined. - Shape the batter
With a spoon, scoop the batter and shape it into rounds. Sprinkle the Everything bagel seasoning over the rounds. - Bake
This no carb cloud bread bagel takes about 30 minutes to be golden, but since not all ovens are the same, check doneness without opening the oven door around 22 minutes. - Enjoy!
Allow them to cool down completely before enjoying them or storing them in a zip bag in the fridge.

Whipping the Egg Whites
Whipping the egg whites is not complicated, but success is in the details. Before starting to make the no-carb bagel batter, check the bowl is clean of any trace fat, like oil or egg yolk, since it keeps the whites from whipping.
I told you before not to skip the cream of tartar, and I really mean it! Cream of tartar is the key ingredient to hold firm peaks when whisking the egg whites.
And whisk. Whisk enough until the whites are firm, meaning you can lift them with a spoon, turn them upside down, and the egg whites will not fall. You can see what I mean in the video above.

Storing Leftovers
Allow the no-carb cloud bread bagel to cool down to room temperature before placing the rounds in a zip bag or airtight container. Store in the fridge for up to 3 days. If you have more than one layer, use parchment paper to separate them and keep the pieces of bread from sticking.
In case you’re wondering if you can freeze leftovers, sadly, no. While I can’t stop you from doing it, you have to know that cloud bread doesn’t freeze well since the egg whites change their texture, becoming wet and soggy when defrosted.

No Carb Cloud Bread Bagel

Ingredients
- 3 eggs, whites and yolks separated
- 3 tablespoons full-fat cream cheese, room temperature
- 2-3 drops liquid stevia, optional
- ¼ teaspoon cream of tartar
- 1 teaspoon Everything but the Bagel seasoning
Instructions
Prep:
- Preheat the oven to 300F and line two baking sheets with parchment paper or a silicone mat.
Make the batter:
- In one bowl, combine the egg yolks with the softened cream cheese and stevia until you have a smooth batter.
- In a large bowl or the bowl of your stand mixer, place egg whites and cream of tartar. Whisk the egg whites on medium speed, moving up to high speed until they are fluffy and stiff peaks have formed.
- With a rubber spatula, gently fold the egg yolk mixture into the egg whites until combined.
Shape the mixture:
- Scoop the mixture onto the baking sheets with a spoon and shape them into ¾-inch thick, 4-inch rounds. Sprinkle the Everything but the Bagel seasoning over the rounds.
Bake:
- Bake for 30 minutes until they are golden. Cooking times will vary as all ovens vary slightly in temperature. Check for doneness without opening the oven door around 22 minutes.
Serve & store:
- Once done, remove the cloud bread from the oven and allow them to cool down completely.
- Transfer them to a zip bag for storage and refrigerate for up to a week.
