Raspberry Hot Chocolate

Raspberry Hot Cocoa 

My kids have a thing or two for hot chocolate, and since I started making my own hot cocoa mix, I never looked back. When I want to surprise them with something special, I make this delicious raspberry hot chocolate.

It’s pink, like my strawberry hot chocolate, and it’s made with white chocolate chips instead of cocoa powder, turning out a super velvety Valentine's breakfast option.

Ingredients 

For this dreamy beverage, you’ll need fresh or frozen raspberries (no need to defrost them first), sugar or honey, any milk (regular or non-dairy), white chocolate chips, and vanilla extract. If you feel your hot chocolate is not "pink" enough, a few drops of natural red food coloring do the trick.

Raspberry Preserves for Hot Chocolate

You can make this hot chocolate with preserves instead of fruit by adding 4 tablespoons of raspberry preserves to the hot chocolate and stirring until they’ve incorporated into the liquid. Then, pour the raspberry hot chocolate through a sieve before serving to remove any seeds. 

How to Make Raspberry Hot Chocolate 

Check out what the process looks like:

  1. Break down the raspberries so they release their juices. You can cook them with honey in a saucepan or let them sit in a bowl. Once they've turned into a thick, jelly-like mixture, blend them until smooth and strain them through a sieve to remove the seeds.
  2. Bring milk to a simmer and remove from the heat before it reaches a boiling point. Add the chocolate chips, raspberry puree, and vanilla extract. Always stir until smooth!
  3. Make it pink with a few drops of natural food coloring if you feel your raspberry hot chocolate is not as pink as you want.
  4. Serve the hot cocoa into mugs, top them with whipped cream, homemade marshmallows, chocolate syrup, or your favorite hot chocolate toppings.

Ingredients

  • 1 cup raspberries
  • 2 tablespoons sugar, or honey
  • 1 tablespoon water
  • 3 cups milk
  • ¾ cup white chocolate chips
  • 1 teaspoon vanilla extract
  • 2 drops natural red food coloring, optional
  • Whipped cream, for topping

Instructions

Cooked berries method:

  • In a small saucepan, combine the raspberries and sugar or honey and water. Cook over medium heat for about 10 minutes, stirring frequently, until the berries begin to break down. Remove from the heat, transfer to a blender, and blend until smooth. 
  • Strain the raspberry puree through a sieve to remove the seeds using the back of a spoon if necessary.

Make the hot chocolate:

  • In a medium saucepan over low heat, bring the milk to a simmer, whisking constantly. Before the milk reaches a boiling point, remove the saucepan from the heat.
  • Add in the white chocolate chips and stir until they've melted and the white chocolate milk is smooth. If the chocolate isn't dissolving completely, turn the heat on low.
  • Add the raspberry puree and vanilla extract, and stir until they've incorporated into the milk. For a richer red color, add 1 to 2 drops of red food coloring and stir. 

Serve:

  • Divide the raspberry hot chocolate into 4 mugs and top with whipped cream.  

Notes

  • Want to use raspberry preserves instead? Add 4 tablespoons of raspberry preserves to the hot chocolate and stir to combine. Pour the hot chocolate through a sieve before serving to remove any seeds.
