This skillet lasagna is the easiest way to get all the bold, comforting flavors of the classic recipe on the stovetop, without the layers, boiling of noodles, or baking.

Grab your favorite pasta shape to make this stovetop lasagna. It’s a kid-favorite recipe that’s fast, filling, and ready in one skillet.

Quick & Easy Stovetop Lasagna

As a mom of three, I live for weeknight recipes that save me time without sacrificing flavor, especially ones that don’t leave a mountain of dishes. This skillet lasagna is one of those magical quick meals that comes together in a single pan without layering ingredients, boiling pasta sheets, or baking.

It’s a regular in our rotation, along with other sanity-saving pasta meals like my American goulash, my taco pasta, and this easy rotisserie chicken pasta; all of which my family devours.

Ingredients

While you can use ground meat, Italian sausage (made of chicken, pork, or beef) is what brings out the classic flavors in this skillet lasagna, along with onion and garlic. Tomato sauce and water for the sauce, and to cook your favorite pasta shape. And a mix of shredded Mozzarella, Ricotta, and Parmesan cheese for that cheesiness we love.

How to Make Lasagna in a Skillet

Here’s a quick overview of the simple steps to make this on the stovetop. If it’s your first time making it, watch the video in the recipe card.

  1. Cook the sausage and aromatics in a skillet until the onions are soft and translucent and the sausage is no longer pink. Then add the tomato sauce and stir until well combined.
  2. Add the pasta and water to the skillet, bring it to a boil, and cook for about 12 minutes covered, until the pasta is tender.
  3. Add the cheeses, stir, and cover to melt them for a cheesy stovetop lasagna that’s irresistible.
  4. Serve it warm as is, or with an easy side salad or a bruschetta salad.

Ingredients

  • 1 pound Italian sausage (chicken or pork),
  • 1 small onion (½ cup), chopped
  • 3 cloves garlic, chopped
  • 28 ounce can tomato sauce
  • 1 tablespoon Italian seasoning
  • ½ teaspoon red pepper flakes, optional
  • 2 cups water
  • 8 ounces farfalle pasta
  • ¼ teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese, 8oz container
  • ¼ cup Parmesan cheese, more for serving

Instructions

Cook the sausage:

  • Heat a large, non-stick skillet over medium-high heat. Once hot, cook the sausage, breaking it up with a spatula as it cooks until it's nearly browned. Add the chopped onion and garlic to the sausage and cook, until the onions are soft and translucent and the sausage is no longer pink, about 3 minutes.
  • Stir in tomato sauce and seasonings (if sauce isn't seasoned) to the cooked sausage and stir.

Add the pasta:

  • Add 2 cups of water and the pasta to the skillet, stir, and bring the mixture to a boiling/simmer. Once it's simmering, reduce the heat to low and cover. Cook for 12 minutes, checking and giving the mixture a stir once, until the pasta is tender.

Make it cheesy:

  • When the pasta is tender, turn off the heat. Add the mozzarella and stir. Top with small mounds of ricotta cheese and sprinkle the Parmesan on top. Cover with the lid and let the cheese melt for 3 minutes.
  • Serve immediately with additional Parmesan cheese if desired.

Notes

  • This recipe works great with farfalle (bowtie) and penne pasta. If you use macaroni, cooking time will be shorter, about 9 to 10 minutes.
