Sunsweet High Fiber Chocolate Bites

You guys! Fiber has never tasted this good. Or should I say; that chocolate has not been this good-for-you. Just when you thought you were giving up on your new year's resolutions, I mean, it's been six weeks now, here I come with the perfectly portioned recipe to keep your health goals on track.

I mean, I know it's hard to come up with recipes that both our kids and adults will eat each day; but eating healthy isn't a diet or just a "new year's resolution;" it's a lifestyle so finding easy recipes that have nutritional value and everyone loves is always a win-win.

I eat healthy because I want to feel good. I want to be able to participate in all of the amazing things that life has to offer, and when good-for-you foods taste this good, it's not as difficult to stay motivated.

And then, there is the simplicity of this recipe. Busy people like myself need delicious snacks that come together easily and that are great for adults and kids. I want to be able to pack the same types of foods for me and for the kids so that I not only set a good example for them but also it's a lot easier.

Speaking of easy, check out how fast these high-fiber chocolate bites come together. The food processor does all the heavy lifting and with a few pulses, ta-da! These chocolaty pieces are ready to roll out and eat!

While bite sized treats and snacks are plentiful on my websites, cookbooks, and the internet, I haven't found any that incorporate prunes significantly in the recipe since they are a great way to add more fiber into my family's diet. The prunes naturally sweeten this recipe, hello no added sugar! and, they also provide fiber, vitamins, and antioxidants.

As you can imagine, we are obsessed with these little pieces of nature's candy at my house. Since my kiddos were little, they have eagerly eaten a Sunsweet prune or two every day to help their digestive system keep moving and thus eliminating our need to purchase fiber bars and supplements. Now, all I have to do is ask out loud "who wants a prune?" and they all simultaneously answer: "Me!"

I've also used them in my High Fiber Breakfast Muffins and Chicken with Prunes and Sage for dinner, and in my High Fiber and Protein Smoothie Bowl, just to name a few. These nutritious bite-sized goodies are the perfect snack and just the thing to add to any lunchbox.

Ingredients

  • ¼ cup rolled oats
  • 1 cup Sunsweet dried prunes
  • 3 tablespoons nut-free butter*
  • 1 tablespoon honey, optional
  • 2 tablespoons unsweetened cocoa powder
  • 1 scoop your favorite chocolate protein powder, 28g scoop
  • ¼ cup mini chocolate chips, optional

Instructions

  • In the bowl of your food processor, blend oats into a flour-like texture. Add prunes, nut-free butter, honey, cocoa powder, and protein powder, and process mixture until combined, making sure to stop once or twice to scrape the sides. If the mixture is too crumbly, add a tablespoon or two of water. Once the mixture has a sand-like consistency and it adheres to itself when pinching, it's ready to roll it out.
  • Remove the blades from the food processor and fold in mini chocolate chips.
  • Begin rolling out the dough by hand, about a tablespoon at a time and place bites into a container. Refrigerate for 30 minutes until set.

Notes

Most schools are nut free and require a nut-free alternative to be used for this recipe. If you are making these for home and can have peanut butter or almond butter, you can use that instead.
