I love finding new ways to make snack time nutritious and exciting at the same time. This edamame hummus recipe is one that incorporates some of my favorite flavors, plus it’s high in fiber and protein.

Asian Edamame Hummus: The perfect snack to take on the go or eat at home with the kids. Full of veggies and taste delicious.

For this recipe, I’ve teamed up with Bitsy’s Brainfood to create a fun snack you and your family will love. My kids especially like to pair this dip with the Cheddar Chia Veggie Smart Crackers. Their size, shape, and texture are perfect to pick up this thick dip.

My family loves hummus; we go through more hummus in a week many do in a month! Although a little untraditional with both the ingredients and the color, this “dinosaur” dip -as I like to call it, will be a winner.

Humor me for a minute here. After three cookbooks and hundreds of recipes that have needed a name, giving recipes a pseudo name is nothing new for me. I mean, with kids, you sometimes have to have a little fun, especially in the kitchen!

Speaking of fun, I had a blast creating this video with a surprise appearance from my youngest son. He showed up to the kitchen after his brother's karate lesson, walked in like he had a job to do, brought the stool next to the counter and said: I'm ready!

As you can imagine, creating recipe videos with a 4-year-old are far from scripted. They are very candid and often capture unexpected moments that are some of my most favorite video takes. For this reason, I nearly always try to put those in the outtakes, to give you a little glimpse of what happens when the camera is rolling and we are just doing our thing.

Speaking of working with a 4-year-old and making food videos, he thinks it’s snack time the whole time. Which is fine, since Bitsy’s Smart Crackers are made with organic veggies and organic cheddar -I’m just saying that it was hard to keep him from eating them all and leaving us with some to create the video! Kids are funny like that.

As you know, around my house, healthy and fun go together, and that is also the philosophy at Bitsy’s. The edamame hummus recipe goes great with their crackers, and it’s also a fun recipe to make with your kids!

It’s super easy since a food processor does all the work! You toss in all the ingredients and hit the start button. And that is it! Scoop out the dip into your serving bowl and add some of Bitsy's Brainfood Cheddar Chia Veggie Smart Crackers on the side.

You can also make this dip ahead of time and refrigerate it up to 3 days. The thick consistency makes it very portable snack too!

Ingredients

  • 1 ½ cups 225 g frozen shelled edamame (soy beans)
  • 2 tablespoons 30 g tahini
  • ¼ cup 60 ml water
  • 3 tablespoons 45 ml lemon juice, about 1 lemon
  • 2 teaspoons 10 ml soy sauce
  • 1 clove garlic, grated or mashed
  • ¾ teaspoon 4.5 g kosher salt
  • ½ teaspoon cumin
  • ¼ teaspoon ground coriander
  • 3 tablespoons 45 ml olive oil
  • 1 tablespoon 4 g fresh flat leaf parsley, finely chopped

Instructions

  • Boil edamame in salted water for 4-5 minutes, or microwave, covered for 2-3 minutes.
  • In a food processor, puree the edamame, tahini, water, lemon juice, soy sauce, garlic, salt, cumin, and coriander until smooth. Then drizzle in olive oil, mixing until fully combined.
  • Transfer to a medium bowl and fold in parsley.
