Blueberry Banana Bread

This blueberry banana bread is moist, lightly sweet, and bursting with fresh blueberries in every slice.

Banana Bread with Blueberries 

This blueberry banana bread is what happened when I couldn't decide between making my incredible blueberry bread or my Greek yogurt banana bread. 

This recipe has the juicy pop of berries but also that soft, just-sweet-enough texture you can achieve by adding yogurt to the banana bread batter. It’s moist, bakery-style, and it’s a loaf that disappears fast! 

Benefits of This Recipe 

Banana bread made at home with real, fresh ingredients is a healthier choice than the box. By adding blueberries, you’re including more fiber, vitamins, minerals, and antioxidants in this delicious treat.

Greek yogurt adds a protein boost to this bread, making you feel satisfied, while also providing extra calcium, potassium, and other vitamins and minerals that are always welcome!

Making Blueberry Banana Bread 

This recipe is just as simple as making classic banana bread: simply combine the ingredients in a bowl until you have the batter. The only difference is how and when to add the blueberries.

This recipe can be made with fresh or frozen blueberries. If you use fresh berries, coat them with a little flour to keep them from sinking to the bottom. Frozen blueberries won’t distribute evenly in the bread, even when coated with flour.

Whether you use fresh or frozen blueberries, gently fold them into the batter with a spatula once all the ingredients are just combined.

Should You Cover Banana Bread When Baking

I recommend covering the blueberry banana bread with foil after 40 minutes in the oven to retain its moisture and keep it from burning on the top while it finishes cooking.

Ingredients

  • 2 large ripe bananas, about 1 ½ cups mashed
  • ½ cup Greek yogurt, vanilla or plain
  • ½ cup butter, melted
  • ½ cup white sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups blueberries, fresh or frozen

Instructions

Prep:

  • Preheat the oven to 350F. Grease a loaf pan or line it with parchment paper.

Make the batter:

  • Mash the bananas in a large bowl. Add the Greek yogurt, melted butter, and eggs, and whisk until combined. Then, add the sugar and vanilla, and mix to incorporate.
  • In a separate bowl, combine the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients bowl until just combined. Add the blueberries to the bowl and gently fold them into the batter using a spatula. Pour the batter into the prepared loaf pan.
  • Optional: Slice a banana in half lengthwise and place it on top of the batter.

Bake:

  • Bake for 55 minutes until a toothpick inserted in the center comes out clean. After 40 minutes, check the bread. If the top of the loaf is getting too brown, cover it with a piece of tin foil and keep baking.
  • Remove the banana bread from the oven. Allow it to cool down for 15 minutes before removing it from the pan and cutting it into slices.
