What if I told you that you could make a complete breakfast in 45 seconds? The type of breakfast that your family will be asking for again and again? These breakfast tacos with turkey sausage and pineapple salsa are easy to eat and make.

This week, I’m working with Jimmy Dean to create this quick and easy breakfast hack. The hack comes into play by using fully prepared fresh food items to fill the tacos, like pre-washed spinach, fresh pineapple chunks, and pico de gallo.

Together, Jimmy Dean and I created this fun 45-second cooking show video that demonstrates that the tacos really only take 45 seconds to assemble. Everyone has 45 seconds to make a complete breakfast, right?

If your household is like mine, the mornings can be very hectic. So much, that making a full breakfast is usually out of the question unless I have pre-made, homemade waffles or pancakes in the freezer. But, those don’t have fruit and veggies built in… and these tacos do!

Both my husband and Jaime have declared these tacos a winning recipe and they’ve already requested it twice in one week! He said, and I quote, the savory from the sausage, the sweet from the pineapple, and a little bit of heat from the pico make this a terrific combination!

Making the pineapple salsa is nearly instant when you use some quick kitchen hacks, like using freshly prepared ingredients. This quick hack can save one a lot of time and help us eat better.

Another reason I like this breakfast is because the sausage adds the protein I often don’t have time to make. I can’t make eggs every morning when we are rushing out the door. And, when given the option of a carb-filled breakfast to a complete one like these breakfast tacos, I rather opt in for a breakfast that is high in protein to keep me filled longer.

Making these breakfast tacos was fun and easy. Since the sausage was fully cooked it made this breakfast ultra convenient for those days we are in a rush or when everyone seems to be going in their own direction. It is a must to have something on hand that can be made into a full meal and is super quick for my family.

Ingredients

Scale
  • 1 cup pico de gallo
  • 1 cup diced fresh pineapple
  • 2 cups baby spinach, chopped
  • 8 fresh corn or flour tortillas
  • 1 box of Jimmy Dean Fully Cooked Sausage Patties, any variety

Instructions

  1. In a medium bowl, combine pico de gallo with diced pineapple.
  2. Place baby spinach onto flour tortillas, top with a heaping tablespoon of fresh pineapple salsa.
  3. In the microwave, heat up fully cooked sausage for approximately 45 seconds, following package directions.
  4. Place heated sausage patties onto tacos, either cut in half or whole, fold, and serve immediately

    This recipe LOOKS AMAZING!!! I wish we were neighbors! I have to try this with my little darling.

    At our house breakfast sausage is usually eaten on its own with muffins or waffles or pancakes. Get the protein in with favorite breakfast breads. My kids love the links.

    We like making breakfast burritos with sausage, eggs, cheese, potatoes, and a few veggies. When I find ingredients (like eggs) on sale, I usually make a big batch and then individually wrap and freeze to make a quick, complete breakfast.
