Overnight Oatmeal That Tastes Like Carrot Cake
My carrot cake breakfast cookies are a family favorite, so why not turn them into a jar of creamy oatmeal I can grab and go on busy mornings? Exactly. These carrot cake overnight oats are delicious and healthy, without the indulgence of my carrot cake pancakes.
Ingredients
The base of this recipe is old-fashioned oats (the best for overnight oats) and milk (regular or dairy-free). Finely shredded carrots, raisins, chopped walnuts, cinnamon, and vanilla are added for the classic carrot cake taste and texture. You can add a little brown sugar or maple syrup for sweetness.
How to Make Carrot Cake Overnight Oats
Here are the quick steps to make these overnight oats:
- Combine all the ingredients in individual jars or mix everything in a large bowl and then divide the mixture into the jars. I find this last method easier.
- Refrigerate the lidded jars for 4 hours or overnight.
- Serve cold or microwave for a few seconds; that's up to you!
How Long Do They Last?
Even with the shredded carrots and mix-ins, these can last up to 4 days in the fridge.

Carrot Cake Overnight Oats

Ingredients
- 1 cup old-fashioned oats
- 1 ½ cups milk, any
- ½ large carrot, shredded
- 2 tablespoon raisins
- 4 walnut halves, chopped
- 2 teaspoons brown sugar or maple syrup, optional
- ½ teaspoon cinnamon
- ½ teaspoon vanilla
Instructions
Fill the jars:
- Fill each jar with ½ cup of old-fashioned oats, ¾ cup of milk, some of the finely shredded carrot (about ¼ cup in each), 1 tablespoon of raisins, chopped walnuts, ¼ teaspoon of cinnamon, ¼ teaspoon of vanilla, and 1 teaspoon of brown sugar or maple syrup, if using. Stir to combine.
- Tip: Sometimes, it's easier to mix everything in a large bowl and then divide the mixture into two jars.
Refrigerate:
- Cover the jars with a lid and refrigerate for 4 hours or overnight.
Serve:
- Warm up for 30 seconds in the microwave, or enjoy cold.
