Pumpkin Pie Overnight Oats

These Pumpkin Pie Overnight Oats make a hearty, delicious breakfast that tastes like a treat and you can prep ahead.

If adding pumpkin puree to some of your favorite breakfast staples is your thing, you’ll love it in these overnight oats!

Overnight Pumpkin Oats

Oats are my favorite staple for all sorts of breakfasts like baked oatmeal, smoothies, and overnight oats. By adding pumpkin pureé, cinnamon, and pecans to the classic overnight oats, I get the perfect fall-inspired breakfast. 

It’s nutritious, delicious, and a portable version of the fall flavors we enjoy during the weekend when I serve pumpkin French toast and pumpkin pancakes. This recipe calls for only ½ cup of pumpkin pureé, so it’s perfect when you need something to make with canned pumpkin leftovers.

Ingredients

Old-fashioned oats (rolled oats) give overnight oats the best texture. You’ll also need pumpkin pureé, maple syrup for natural sweetness, regular or non-dairy milk, and three classic fall spices: ground cinnamon, ground nutmeg, and ground cloves.

How to Make Pumpkin Pie Overnight Oats

Here’s how to make these overnight oats with pumpkin in a bowl:

  1. Combine the oats, pumpkin pureé, maple syrup, cinnamon, cloves, and nutmeg. Add the milk and stir to combine.
  2. Refrigerate for 4 hours or overnight.
  3. Serve the overnight oats in 4 bowls, chilled or warm them up in the microwave. You can store them in the fridge for up to 5 days.

Toppings and Mix-Ins for Pumpkin Overnight Oats

You can make these pumpkin pie overnight oats even more nutritious -and delicious- by mixing wholesome ingredients like seeds or adding them as toppings. Here are some terrific ingredients to add:

  • chia seeds
  • hemp seeds
  • flax meal
  • sunflower seeds
  • nuts
  • Greek yogurt
  • chocolate chips
  • sliced banana
  • raisins

Ingredients

  • 2 cups old-fashioned rolled oats
  • ½ cup pumpkin puree
  • 2 tablespoons maple syrup
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 3 cups milk or non-dairy alternative

Instructions

  • In a large bowl, combine the oats, pumpkin pureé, maple syrup, cinnamon, cloves, and nutmeg. Add the milk and stir to combine. Refrigerate for 4 hours or overnight.
  • In the morning, stir to combine. Divide between 4 bowls and warm-up if desired or enjoy cold.

    Have you ever made this recipe with steel cut oats? Do you adjust the liquid?

      Hi Suzi, steel cut oats -unless they’re specifically labeled “quick cooking” can’t be used for overnight oats they will not break down and soften. You can cook the steel cut oats and add the other ingredients and turn it into these.
