This homemade Pho recipe is easy to make at home and has all the flavors of the classic Vietnamese soup. The perfect slow cooker recipe for beginners.

Ingredients
The protein in this soup is chicken breasts or thighs sliced into thin strips. To make it a soup, you’ll need chicken broth from the carton, or my homemade chicken broth. I also include fresh ginger, garlic, soy sauce, and fish sauce. And, of course, don’t omit the thin rice noodles; you can find them in the Asian dry-goods section of your grocery store.
How to Make Pho
- Prep the chicken.
Trim off the excess fat from the chicken breasts or thighs and slice into thin strips. - Cook the soup.
Add the chicken, broth, garlic, ginger, soy sauce, and fish sauce to the slow cooker dish. Stir to combine and cook on low for 8 hours. - Assemble your Pho
Add the uncooked rice noodles to individual bowls. Ladle the chicken and HOT broth over the noodles and allow them to sit for 1-2 minutes. Top with your favorite toppings.

- 3 cloves garlic, grated
- 2 teaspoons freshly grated ginger
- 1 tablespoon soy sauce, or coconut aminos or Tamari
- 1 tablespoons fish sauce
- 12 ounces dried thin rice noodles
Toppings:
- 2 green onions, sliced, whites and greens divided
- 2 cups bean sprouts
- ½ cup fresh cilantro leaves
- ½ cup fresh mint leaves
- 1 jalapeno, thinly sliced
- 2 limes, sliced into wedges
Instructions
Prep the chicken:
- Use a sharp knife to trim any excess fat from the chicken breast or thighs and slice into thin strips.
Cook:
- Add the chicken, chicken broth, garlic cloves, fresh ginger, soy sauce, and fish sauce to the slow cooker dish. Stir to combine and cook on low for 8 hours.
- Before serving, assemble rice noodles, sliced onions, bean sprouts, cilantro, mint, jalapeño, and limes into smaller bowls.
Serve:
- To serve, add the uncooked rice noodles, bean sprouts, cilantro, and other desired toppings to individual bowls. Ladle the chicken and broth over the rice noodles and serve. Rice noodles will cook in about 1 minute.

I love to use chicken broth in chili made with ground beef and sweet potatoes! I make it pretty spicy but the sweet potatoes cut the spice with sweetness so even my six year old will eat it!

You can use a little under 2 teaspoons of ginger paste and about 3/4 teaspoon dried ginger. Enjoy!
