How to Stuff an Avocado with Egg salad
It takes no time at all to stuff an avocado with egg salad. You can even prepare the egg salad beforehand to save yourself time in the kitchen.
- Prepare the egg salad
In a medium bowl, combine the diced hard-boiled eggs, mustard, paprika, mayo or yogurt, chives, and seasonings. Stir to combine. - Prep the avocado
Cut the avocado in half and remove the pit. Use a pairing knife to ‘score’ the avocado or cut the center from top to bottom and crosswise without piercing through the skin. - Fill
Using a large spoon, scoop a portion of the eggs salad into the center of the avocado. Be generous and make sure to cover the entire surface. - Pack it for lunch
Place 1 to 2 avocado halves into a lunch container and pack into a lunch bag. Be sure to include an ice pack!

Keeping Avocados Fresh for Lunch
The best way to delay avocado from browning too quickly is to brush the surface with a little lime or lemon juice before filling. If you are concerned about the lime/lemon juice altering the flavor, cover the ‘exposed’ avocado surface with enough egg salad- trust me, it works.
A sturdy lunch container with compartments also helps to keep the egg salad and avocado intact while allowing you to pack additional ingredients such as crackers and fruit.


Egg Salad Stuffed Avocado
Ingredients
- 4 hard-boiled eggs, diced small
- 1 tablespoon yellow mustard
- ¾ teaspoon paprika
- 3 tablespoons mayo or plain Greek yogurt
- Pinch of salt
- Pinch of pepper
- Chives , for garnish
- 2 avocados
Instructions
- In a medium bowl, combine diced eggs, mustard, paprika, mayonnaise or yogurt, salt, and pepper.
- Slice avocado in half, divide, and remove pit. With a spoon, stuff each avocado half egg salad and serve.
