Blanched Almonds vs. Unblanched for Flour
Almond flour is made with blanched almonds, which are almonds whose skin has been removed by soaking in boiling water to separate the skin from the almond. This gives almond flour a fine texture.
Unblanched almonds are almonds with the skin still on. When ground, this is called almond meal, which is thicker and coarser than almond flour.
When a recipe calls for almond flour, it’s essential to use blanched almonds since almond meal has a coarser texture and will make the baked goods denser.
