For many families, weekdays are filled with scheduled things like school (or summer camp), chauffeuring the kids to and from activities, and coordinating schedules and meal times to make sure everyone is fed and happy – my own included.

Over the years, I’ve learned that one of the things my kids love is to spend time outside together as a family. Quality family time is the cure for all the bickering and disagreements that occur throughout the week in the back seat of the van.

Not long ago, I made a commitment to have one fun family night per week, to sort of press “pause” on time and disconnect from everything to focus on our family. Many of our friends go out to eat as a family one night a week, but between food allergies (and sensitivities) in addition to picky eaters, it’s a lot easier to stay in and eat the kids’ favorite food: pizza!

More often than not, this fun family night happens on Fridays (except when the kids head out to grandma’s for the weekend) and today, I want to give you a little preview of our Friday night fun.
Having an established family night has pulled our family together. We focus on the fun activities, game, or movie we are going to watch that night, and sometimes we get to go to the grandparents’ pool and that’s always a blast!

My daughter and I are often in charge of figuring out the food and snacks and I like to keep things simple by making our favorite gluten-free pizza by Freschetta with fruit skewers or salad. Keeping a frozen Freschetta Gluten Free pizza (or three) in our freezer at all times, as a convenient option for impromptu gatherings, play dates, and social activities that allow my son who has a gluten allergy to feel included.

While the boys make an exit from the kitchen to play, I really like the time I get to spend with my daughter in the kitchen. Currently, our conversations are focused on the slime business she wants to start, how to best market her slime Instagram account, and the things she sees the “competition” doing. I’ve learned the most interesting things about her by listening to her ideas.

From time to time, we also use the gluten-free cheese pizzas as the base to create a pizza bar, where we add a variety of toppings before we pop them in the oven. Ultimately, finding foods that my family loves that are gluten-free and delicious is the simplest way to ensure that everyone is happy and nobody feels left out. My family is gluten free too and when we were first diagnosed with celiacs 3 years ago (2 out of the 3 of us) I thought it was a death sentence. I haven’t had pizza since until last weekend when I tried this and OMG I went back the next day to buy more. This was the best thin crust gluten free pizza i’ve ever had. thank you!!!!
