Ever since my kids went to a friend’s Halloween party, where they tried the well-known dirt cups, they’ve been hooked. Of course, upon returning home, they asked me to make them for over a week! So, I had to figure out a way to make these, with a lot less sugar, but just as much fun!

Eventually, sometime around the second batch, I ran out of vanilla pudding and began using vanilla Greek yogurt instead. For the “dirt” I used some of our favorite cookies, Bitsy’s Brainfood Smart Cookies. So, when the opportunity to partner with Bitsy’s presented itself, I knew this would be a terrific recipe to share with you!

Unlike the traditional dirt cups, there is no cooking required for these! Watch this video see how simple these festive cups are to make.

As you can see, by making a few adjustments to a fun treat, you can keep serving these as a snack year round. Bitsy’s Orange Chocolate Beet Smart Cookies are made with real organic beets, whole grains and packed with nutrition (an excellent source of vitamins A, B12, D3, and Folic Acid and a good source of Calcium and Iron). Building these cups is fun too, with the alphabet letters it’s almost like playing with your food! Speaking of playing with your food, let’s talk about how much fun it would be to find these dirt cups inside a thermos for an after-school treat! Whoa, now we are talking!

That is if you have cookies left to make enough for a crowd. Every time I make these, my youngest eats a cookie and then adds: “mom! I just ate the letter A, and now the letter…” and so on.

As you know, I love to bring the kids in the kitchen whenever I can to make everything from salads, tacos, to treats. I know a lot of parents only bake with their kids, but mine love to get involved in any way they can; especially if it involves crushing cookies and eating a few while mom isn’t looking.

For larger batches, you can make these the night before a party and have a fridge full of treats for the kids. What’s better than a recipe that is not only delicious but also nutritious?

This Halloween, switch things up with a healthy snack! High Protein Healthy Dirt Cups: Here is a tasty way to make the kid-favorite dirt cup.

Ingredients

  • 16oz container vanilla Greek yogurt
  • 2 cups Bitsy’s Brainfood Orange Chocolate Beet Smart Cookies, crushed

Instructions

  1. Place cookies inside of a large zip bag, and using a rolling pin on a flat surface, roll and crush cookies. Alternatively, place cookies in a food processor and pulse until you achieve sand-like texture.
  2. In a small plastic cup, place a tablespoon of crushed cookies. Top with 1/3 cup yogurt, followed by 2 tablespoons crushed cookies, additional yogurt, and crushed cookies on top. Repeat process to fill all 4 cups.
