When traveling and staying at AirBnBs, I love making pancakes for my family to wake up to and enjoy. While I sometimes make pancakes with a mix, if it’s just one breakfast and I don’t want to waste half of the box, I make fluffy pancakes using a muffin mix!
While all you need is one ingredient to turn that mix into muffins, I’ve learned that you need two ingredients to make fluffy pancakes because only adding the liquid yields thin pancakes. -and I share all that and more here.
Is Muffin Mix the Same as Pancake Mix?
No, these two mixes are not the same. Pancake mix calls for more liquid, whereas muffin mix contains more baking powder, sugar, and fat. This is why the muffins are more cake-like, while pancakes are light and fluffy.
Ingredients
The amounts of the ingredients to make these muffin mix pancakes are below; but before you make any swaps, here are some ingredient details:
- Muffin Mix: all 6 to 7oz pre-packaged muffin mixes include everything you need to make these. I used a Martha White mix for this recipe, but use your favorite brand; I’ve tested this recipe with 4 different brands available in many US supermarkets.
- Egg: while muffin mix does not require eggs, we add eggs to this recipe to provide the pancakes with some structure (texture).
- Milk: I recommend using milk, not water, to give your pancake batter moisture and flavor. In a pinch, you can use water, but first check that the ingredients contain powdered milk.

Best Muffin Mix for Pancakes
The best muffin mixes are the single, pre-measured packages weighing between 6 and 8 ounces. Some popular brands include Martha White, Ducan Hines, and Betty Crocker.

How to Make Muffin Mix Pancakes
Some tips to make waffles with pancake mix turn out great in each of the steps include:
- Make the batter
Combine muffin mix and other required ingredients in a large mixing bowl. Use a fork to break up the egg first to avoid overmixing, and then mix the rest until there are no visible clumps. - Heat the griddle
I like mixing up the batter first and then heating my griddle to avoid getting too hot and overcooking or burning my pancakes. Grease with cooking spray or butter before pouring to prevent pancakes from sticking to the griddle. - Make the pancakes
After greasing your griddle, pour ¼ cup of the mix. You’ll know it’s time to flip the pancakes when bubbles form, and the edges are defined. - Serve
Serve warm, topped with butter and your favorite pancake toppings.

Muffin Mix Pancake Batter
At first, compared to classic pancake batter, the batter feels a little runnier, which is why I like to wait 5 minutes for the batter and let the flour absorb the moisture so the pancakes have a better texture after they’re cooked.
When to Flip Pancakes
You know it is time to flip your pancakes when the edges develop a defined edge and the batter is held in place. Another way to know when it’s ready to flip is when bubbles form at the top of the batter. Flip away but never press them down with the spatula.

We’ve tested this recipe with several muffin mix flavors, and the pancakes have all turned out amazing. The most widely available are chocolate chip, blueberry, strawberry, and cinnamon sugar muffin mixes.

The possibilities for pancake toppings for these muffin mix pancakes are endless! Depending on the type of mix used, I recommend butter and pancake syrup, sliced fresh fruit, or a drizzle of blueberry pancake syrup.

Ingredients
- 1 package 6-7.5 oz muffin mix*
- ½ cup milk
- 1 egg
Instructions
Make the batter:
- Add the muffin mix into a bowl. Pour the milk and add the egg to the bowl. Use a fork to break up the egg first, and then mix with a whisk or fork until the batter is smooth. Wait 5 minutes for the batter to set.
Cook the pancakes:
- Heat a non-stick griddle or large pan over medium-high heat. Once hot, grease, spray, or melt butter on the hot surface. When using an electric griddle, heat it somewhere between 300 and 350F.
- Immediately, pour ¼ cup of pancake batter onto the greased pan. Cook the pancakes for about 2 minutes, until the edges look defined and bubbles form. Flip the pancakes over and cook for another minute on the other side. Remove from the pan onto a plate and cook the remaining pancakes.
Serve:
- Serve the pancakes warm, topped with your favorite toppings.
