Mushroom Pasta with Garlic
You’re going to love this garlic mushroom pasta. It’s tossed in the same olive oil and garlic mixture that made my rotisserie chicken pasta internet-famous. It feels rich, but it’s lighter, without the heavy cream, than my mushroom Alfredo.
Ingredients
You can make this recipe with your favorite pasta. For the sauce, you’ll need butter, garlic cloves, mushrooms, Italian seasoning, salt, red pepper flakes (or ground pepper), extra-virgin olive oil, and Parmesan cheese.
How to Make Mushroom Garlic Pasta
Here’s what you’ll do to make this mushroom pasta your next favorite dinner:
- Cook the pasta and, once done, reserve 1 cup of pasta water.
- Sauté garlic, mushrooms, and seasonings in melted butter. Let it cook for 10 minutes until the mushrooms are soft and brown. You can start doing this while the pasta cooks.
- Combine the pasta with the sauce. Then, add olive oil and Parmesan cheese and toss to coat. If you prefer it saucier, add pasta water until you reach the desired consistency.
Olive Oil Butter Sauce
When you use olive oil and butter for a sauce, as I do in this recipe, you get the best of both worlds: while the butter yields a deliciously creamy texture, the olive oil adds a rich flavor that goes great with herbs and has a high smoking point that lets you brown the garlic without burning the butter.

Easy Garlic Mushroom Pasta

Ingredients
- 16 ounces of pasta
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 16 ounces sliced mushrooms
- 1 ½ tablespoons Italian seasoning
- 1 teaspoon salt, reduce by half if butter is salted
- ¼ teaspoon red pepper flakes, or ground pepper
- ½ cup extra-virgin olive oil
- ⅓ cup Parmesan cheese
- 1 cup reserved pasta water
Instructions
Prep:
- If you purchased whole mushrooms, clean and slice them.
Cook:
- Cook the pasta following the instructions on the box. When the pasta is ready, reserve 1-cup of the pasta water and drain it.
- While the pasta cooks, melt the butter in a skillet and add the minced garlic, mushrooms, Italian seasoning, salt, and red pepper flakes. Sauté for about 10 minutes, until the mushrooms are soft and have turned into a rich, deep brown color.
Combine:
- Add the pasta to the skillet. Then, add the olive oil and Parmesan cheese. Use kitchen tongs to coat all the pasta with the garlic-butter sauce and mushrooms while distributing the olive oil throughout. This is a "coating" more than a "sauce." To make it saucier, slowly add the reserved pasta water (heat it in the microwave if it's not hot) to the skillet, toss to coat, and turn it into a sauce.
- Serve warm, topped with extra Parmesan cheese.
