With no milk and less sugar, this Pumpkin French toast is a guilt-free fall breakfast idea packed with pumpkin flavor that you'll wake up excited to make.

Pumpkin Spice French Toast

From pumpkin pancakes to pumpkin spice hot chocolate, fall makes me crave all things pumpkin. So, pumpkin French toast? Of course!

This recipe has been a family favorite for a while and I don’t complain. It’s super easy to make and I feel good about serving it since there’s no added sugar if you don't count the drizzle of maple syrup over the toast, and there's no milk or cream in the liquid base.

Ingredients

You’ll need classic French toast ingredients: eggs, vanilla extract, a thick-sliced Texas toast, Brioche, or bakery bread. And what makes this recipe so epic is adding pumpkin purée and pumpkin spice (that you can swap for cinnamon).

How to Make Pumpkin French Toast

Making this recipe is just as easy as regular French toast. Here's what to do: 

  1. Make the liquid base
    A pie dish or baking dish works great for whisking the eggs with canned pumpkin purée, pumpkin spice, and vanilla extract.
  2. Soak
    Let the bread soak for a minute before flipping and soaking for an additional minute. 
  3. Cook
    After cooking the first side, flip the slices over, cover with a fitted lid, and cook for an additional 2 minutes or until golden brown.

How Do You Know When French Toast is Done

You’ll know your french toast is done cooking when the centers are puffed up, and the edges are set and browned. This signals that all of the liquid in the bread is cooked out. Keep in mind, once the french toast is removed from the pan, it will ‘deflate’ a little, but this doesn’t mean it’s soggy.

Best Toppings for Pumpkin French Toast

When it comes to toppings, you can be as fancy as you like or keep it simple. There's no wrong way! My favorite ones are maple syrup, cinnamon syrup, whipped cream, chopped pecans or walnuts, and cinnamon.

Ingredients

  • 4 eggs
  • ¼ cup pumpkin purée
  • ¼ teaspoon pumpkin spice or cinnamon
  • ½ teaspoon vanilla
  • 4 slices thick white bread
  • Maple syrup, for serving

Instructions

Prep:

  • In a wide, shallow dish, whisk the eggs with the pumpkin, pumpkin spice (or cinnamon), and vanilla until combined. 
  • Place each slice of bread into the egg mixture and allow it to absorb, using a fork to prick each slice gently. Flip the slices and repeat with the remaining side. 

Cook:

  • Lightly grease a large griddle or skillet with butter or cooking spray and heat over medium heat, 350F if using a griddle.
  • Add the bread slices to the griddle and cook for 3 minutes or until the bread gets a golden, brown crust. Flip and reduce the heat to medium before covering the pan with a fitted lid. Cook for an additional 3-5 minutes until the opposite side is golden brown. 
  • Remove from heat and serve with syrup and your choice of toppings.
