This Tuesday we're making breakfast sausage tacos with fresh pineapple salsa. They're smoky, tangy, and sweet all in one tortilla!

Breakfast Tacos with Sausage

While most of the breakfast tacos recipes in my Taco Tuesday Cookbook have eggs, this is an egg-free option that will satisfy any craving! And, I tell you, these breakfast sausage tacos are in a league of their own.

The smoky, spicy sausage paired with fresh and tangy pineapple salsa is irresistible! But my favorite part of these tacos is how little time they take to make. In less than 10 minutes, you have a full-course meal in the palm of your hand.

Ingredients

These breakfast tacos have nothing but fresh, good things. Grab your favorite breakfast sausage patties (I use turkey for a leaner option) or make your own sausage patties. Add baby spinach, make a simple pineapple salsa (or use regular salsa instead), and this epic meal is ready!

How to Make Breakfast Sausage Tacos

I recommend making the pineapple salsa up to 2 days ahead to cut down on kitchen time. It’s as simple as combining chopped pineapple with pico de gallo. In the morning, you’ll just chop the spinach and warm the breakfast sausage. Assemble and enjoy!

What to Serve with These Tacos

Breakfast for dinner is my thing and when it comes to tacos I don't hold back. When I serve these for dinner or as a weekend brunch, I pair them with a fresh salad and enjoy an Iced Coffee with Tequila or a Tequila Sunrise.

Ingredients

  • 8 1-ounce/28g fully cooked turkey breakfast sausage patties
  • 2 cups baby spinach, chopped
  • 8 flour tortillas, warmed
  • Pineapple salsa

Instructions

Prep:

  • Heat up the sausage patties according to the package directions.

Assemble:

  • Sprinkle some chopped spinach onto each tortilla and top with a large spoonful of pineapple salsa. 
  • Cut sausage patties in half and place two halves on each taco. Fold and serve!
