Sausage Breakfast Taco Ingredients
For these breakfast tacos, you’ll need four simple ingredients:
- Breakfast sausage patties: use turkey for a leaner option or pork.
- Baby spinach: a great alternative to lettuce for breakfast tacos.
- Tortillas: your favorite flour or corn tortillas.
- Pineapple Salsa: a sweet-tangy salsa that brings out the spices in the sausage, or you could opt for regular salsa.

How to Make Breakfast Tacos with Sausage
Set a timer and watch yourself make these breakfast tacos in 5 minutes or less!
- Prep
Chop the spinach and warm the breakfast sausage according to the package directions. - Warm the tortillas
A crucial step for good tacos! Use the oven or microwave to warm the tortillas until they are pliable. - Assemble and eat
Sprinkle spinach over each tortilla, and top with breakfast sausage and pineapple salsa. Fold and take a bite!

The Best Breakfast Taco Ideas
Breakfast for dinner is my thing and when it comes to tacos I don’t hold back.
Have you seen the Black Bean & Queso Breakfast Tacos or Steak and Egg Tacos– oh. my. goodness! Steak and veggies in a corn tortilla and topped with a fried egg So. Good.
But these Sausage & Pineapple Salsa tacos are in a league of their own. Contrary to my other breakfast tacos recipes, this one doesn’t have eggs but instead brings the breakfast sausage to center stage. I love the smoky, spicy sausage paired with fresh and tangy pineapple salsa.
How to Make Pineapple Salsa for Breakfast Tacos
First, you start with classic pico de gallo, add chopped pineapple and ta-da! You have Pineapple salsa ready for tacos, salads, wraps, and anything else you can think to eat it with.
I recommend making it up to 2 days beforehand to cut back on kitchen time come Taco Tuesday. On nights like this, it’s time to sit back and enjoy time with family, friends, and tacos.

Breakfast Sausage Tacos with Pineapple Salsa
Ingredients
- 8 1-ounce/28g fully cooked turkey breakfast sausage patties
- 2 cups baby spinach, chopped
- 8 flour tortillas, warmed
- Pineapple salsa
Instructions
- Heat up the sausage patties according to the package directions
- Sprinkle some chopped spinach onto each tortilla and top with a large spoonful of pineapple salsa.
- Cut sausage patties in half and place two halves on each taco.
- Fold & serve!

I had never added pineapple to sausage tacos but now that I made this recipe I have to say it tastes AMAZING! Now breakfast it’s not the same!!
