Taco Bowls

This taco bowl is packed with seasoned ground beef, crunchy toppings, and all your favorite taco fixings, served in a bowl instead of a shell. 

Skip the assembly and tortilla shells and dig into a taco bowl that’s easy to prep, loaded with flavor, and always a hit with the whole family.

Ground Beef Taco Bowls

When I want all the flavor and satisfaction of tacos but actually want to fill up with a bowl, this is the recipe I make. It's got the same delicious seasoned ground beef from my American tacos, plus the loaded toppings you’d expect from fajita bowls.

This is a recipe I reach for when I’ve completely forgotten to prep dinner. I can grab a pound of ground beef straight from the freezer, use my how to cook frozen ground beef trick, and still get a filling meal on the table fast. 

Ingredients

Everything you’d expect in a fresh beef taco, but in a bowl. Chopped green or Romaine lettuce, canned black beans, canned or frozen (thawed) corn, taco-seasoned ground beef, fresh tomatoes (cherry or diced Roma), avocado, shredded cheese, crunchy tortilla chips, and sour cream for topping. 

How to Make Taco Bowls

You don’t have to go out to Chipotle to make this at home. Brown the ground beef with the taco seasoning, and while that cooks, you can chop up and assemble the fresh salad ingredients into a large family-sized bowl or four individual bowls. Pick your salad dressing, and serve it with a little sour cream and tortilla chips.

Best Dressing for Taco Bowls

I like to take my taco bowl to the next level by drizzling some avocado lime ranch over the top. You can keep it classic with a homemade Ranch or add more protein with this cottage cheese Ranch dressing.

Ingredients

  • 4 cups chopped romaine or green leaf lettuce
  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning
  • 15 ounce can of black beans, rinsed and drained
  • 15 ounce can of corn, rinsed and drained
  • 1 pint cherry or grape tomatoes, halved
  • 1 avocado, diced
  • 1 cup shredded Mexican blend or cheddar cheese
  • Tortilla chips, for topping
  • Sour cream, optional for topping
  • Cilantro Lime Dressing

Instructions

Cook:

  • In a large skillet over medium heat, cook the ground beef for about 8 to 10 minutes, breaking it apart with a spatula as it browns. Sprinkle the taco seasoning mid-way through cooking, and mix it as you cook. Once the meat is fully cooked, drain any excess grease. Or use a slotted spoon to remove it from the pan during assembly.

Assemble:

  • In a large bowl or on individual plates, make a base with the chopped romaine lettuce. Top with the cooked ground beef, black beans, corn, halved tomatoes, and diced avocado.
  • Sprinkle the shredded cheese over the top and add a generous handful of tortilla chips for crunch.

Serve:

  • Add a dollop of sour cream, if using. Drizzle your favorite dressing over the top, and enjoy.
