What are Deconstructed Egg Rolls?
It’s basically the hearty, flavor-packed filling of an egg roll turned into a meal. The main ingredients are ground meat and shredded cabbage. All you need is a large skillet to cook it, and it’s much tastier and filling than sauteéd cabbage alone.
Ingredients
Simple and affordable ingredients make up the bulk of this eggroll in a bowl. Sesame oil is used to sauté the onion and ground meat (beef, turkey, or chicken), while garlic powder, salt, pepper, and a touch of sriracha season everything without making it too spicy. A bag of coleslaw mix saves you prep time since the cabbage is already shredded, and soy sauce adds classic flavor. A splash of rice wine vinegar is the secret to helping the cabbage soften and cook down perfectly.

How to Make Deconstructed Egg Rolls

- Brown the meat and sauté the onions together. The onions take on the flavor of the meat, and their texture nearly disappears.
- Sauté the cabbage by adding it to the skillet. It may seem like a lot at first, but don’t worry, it quickly cooks down in half. Here is where you’ll add the seasonings and continue cooking until the cabbage is soft.
- Serve as is or with cooked white rice to bulk up this meal. This pairs great with a simple cucumber salad on the side.

Absolutely! Each serving is under 300 calories and packs a whopping 27g of protein. Plus, the cabbage is great for gut health and is rich in fiber. I’d say this is a healthy 20-minute meal you can feel good about serving your family.
Deconstructed Egg Roll (Easy & Quick Recipe)

Ingredients
- 2 tablespoons sesame oil
- 1 medium onion, chopped
- 1 pound ground meat
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 ½ teaspoons salt
- 1 tablespoon Sriracha
- 16 ounce bag coleslaw mix
- ¼ cup low-sodium soy sauce
- 1 tablespoon rice wine vinegar
- chopped green onions, for serving
Instructions
Cook:
- In a large skillet over medium-high heat, heat the sesame oil. Add the chopped onion and sauté until it's translucent, about 3 minutes. Add the ground meat, black pepper, garlic powder, salt, and Sriracha. Cook for about 5 minutes, breaking up the meat as it cooks, until the meat is cooked through.
- Add the coleslaw mix and use kitchen tongs to mix it up with the beef. Add the soy sauce and rice vinegar and mix to combine. Keep cooking the cabbage for 5 more minutes while using the tongs to stir until it's tender but still has some crunch left. Turn off the heat, sprinkle the chopped green onions over the top, and cover for 2 minutes.

My family liked this! I did brown the ground beef first (80% lean) with a little of the onion, because it would have had too much grease for our comfort. I used a non-stick skillet and less oil. I also got a request to cut back on the ground beef. I want to try it with shredded or minced cooked chicken, leftover fish, maybe even eggs!

We made this last night as part of of the 30-day family kickstart. It was yummy!! One question on the rice…when you say “regular” does this mean just white or brown rice? So, can I just use instant rice? I am still trying to figure out the grains portion of clean eating… 🙂
