The first sound of jingle bells and I know it's time for all things gingerbread! While I keep the classic gingerbread cake for the holiday table, my family and I indulge ourselves with this delicious gingerbread oatmeal more than once throughout the season!
This holiday breakfast has all the spices and molasses we crave, served in a warm bowl of rich oatmeal. What not to love about it? It’s just as simple to make as the traditional oatmeal recipe but with all the festive flavors we love at this time of the year!
Ingredients
The best oats for a rich and thick oatmeal consistency are old-fashioned oats. You’ll also need any regular or non-dairy milk, salt, vanilla, molasses, and the spices that give this breakfast a festive flavor: cinnamon, ground ginger, nutmeg, and ground cloves.
How to Make Gingerbread Oatmeal
Make this gingerbread oatmeal by bringing oats, milk, and spices to a simmer. Then, add vanilla and molasses. Cook for 5 minutes on the lowest heat until the oatmeal reaches the desired consistency. If you want a thicker texture, cover and let the oats sit in the saucepan for 3 more minutes.

Gingerbread Oatmeal

Ingredients
- 1 cup old-fashioned oats
- 2 cups milk, any
- 1 teaspoon cinnamon
- ¼ teaspoon ground ginger
- ⅛ teaspoon nutmeg
- Pinch ground cloves
- Pinch salt
- 1 teaspoon vanilla
- 1 tablespoon molasses
- Brown sugar, for topping
- Maple syrup, for topping
Instructions
Cook the oats:
- Add the oats, milk, cinnamon, ginger, nutmeg, cloves, and salt to a medium saucepan over medium-high heat. Bring the mixture to a low simmer, stirring occasionally, and once it simmers, reduce the heat to low.
- Add the vanilla and molasses to the warm oats, and stir to mix it into the oatmeal.
- Cook on the lowest heat for 5 minutes, stirring from time to time, until the desired consistency is reached. Turn off the heat. For a thicker oatmeal texture, cover and let the oats sit in the saucepan for 3 more minutes.
Serve:
- Divide the oatmeal into two bowls and sprinkle with a bit of brown sugar and a drizzle of maple syrup. Sprinkle additional cinnamon if desired.
