Laura’s Tips for Blueberry Coffee Cake
While the batter calls for softened butter, use cold and cubed butter for the best crumble texture.
In a preheated oven at 350F, this blueberry coffee cake is done after 50 to 60 minutes of baking. That said, not all ovens are the same, so make sure to insert a toothpick in the center to check doneness. If it comes out clean or with a few breadcrumbs, you know the cake is ready, and it’s time to remove it from the oven.
Once the cake has cooled down fully, cover it with plastic wrap or place it in a lidded container. It can stay on the counter for 2 days or in the fridge for 5 days. You can also freeze leftovers by wrapping individual pieces with plastic wrap or inside zip bags for up to 2 months.
What to Serve with It
As a coffee lover, one slice of this blueberry coffee cake with a classic New Orleans cafe au lait or a cup of instant iced coffee on warm days is a perfect treat. My kids love this cake with my homemade hot cocoa or a healthy smoothie. We often add fresh fruit on the side or a dollop of Greek Yogurt on top.

This is without a doubt the best blueberry coffee cake I have ever had! It runs circles around the Starbucks version. I shared a good portion with a neighbor, and she asked for a copy of the recipe. I made two variations. I substituted plain yogurt for Greek yogurt, and half-and-half for the milk. I know that some have complained about the amount of butter, and adding half-and-half only makes the fat content higher. However, I eat very healthy and mostly organic. I don’t bake a lot and eat very little sweets. This is definitely a treat. I don’t make a meal of it. Bottom line — fabulous recipe!!!

I made this cake and it is gr8!! Of course we always have to change this or that to our preferences or larder. I cut back the sugar in the batter to 3/4 cup, forgot to put in the lemon zest, and drizzled some lemon juice and conf. sugar over the top. Check a little earlier than The bake time given, mine was done earlier than predicted. The cake is dense but still light and airy. I highly recommend that you try this recipe!
