Healthy Peanut Butter Pudding with Greek Yogurt

Making healthy versions of my kids favorite treats and desserts is my motto so this time I combine all the nutrition of Greek yogurt with everyone’s favorite spread to make the most delicious healthy dessert: Greek yogurt pudding!

After publishing The Best Homemade Kid's Snacks on the Planet and the Clean Treats Cookbook, I know that enjoying healthy treats that taste indulgent doesn’t have to be complicated. Quite the opposite! This pudding is a family favorite you can whip it up in 5 minutes in the blender. Could it be any easier?

Plus, you’re serving pure nutrition in a cup, with no refined sugars or weird additives added. Instead, you get many health benefits from Greek yogurt, peanut butter, and banana while savoring a serving of creamy deliciousness!

Ingredients

Three simple ingredients make this pudding a healthy dessert you’ll serve often! Check out why you need these staples:

  • Banana: adds consistency and natural sweetness. Have a ripe banana? It’s perfect for this recipe!
  • Peanut butter: I prefer natural peanut butter, whether it is creamy or crunchy.
  • Greek yogurt: packed with protein and calcium, makes this pudding a nutritious dessert!

Health Benefits of Greek Yogurt Pudding

Greek yogurt and peanut butter make this pudding a high-protein dessert with 9 grams of protein per serving (½ cup), besides probiotics, vitamins, and minerals, such as calcium and copper. Banana also provides tons of healthy benefits to this pudding, including fiber, potassium, vitamins, and antioxidants.

Nutritional benefits may vary depending on the type of peanut butter you use. I use natural peanut butter to make the most of peanut benefits without the extra sodium, saturated fat, or sugar you usually find in regular peanut butter. I also prefer plain, whole milk Greek yogurt for this recipe since it has fewer additives than reduced fat versions.

How to Make Greek Yogurt Pudding with Peanut Butter

Making pudding with Greek yogurt and peanut butter is nothing easier than blending. Below, I share some tips for success:

  1. Blend
    Depending on the thickness of your peanut butter, you may need to add 1-3 teaspoons of water as you blend the Greek yogurt and peanut butter. Add water a teaspoon at a time to avoid the mix becoming too runny.
  2. Add banana
    Add the banana slices and blend until just smooth.
  3. Serve
    You can enjoy this pudding immediately with your favorite toppings or refrigerate it and serve it later.

Serving Greek Yogurt Pudding

If no one is looking, this Greek yogurt pudding is good to eat right out of the blender  -not that I know anything about that! But it is worth waiting a little and enjoying this dessert by the spoonful with toasted peanuts, seeds, or granola on top for extra crunch or a few extra slices of fresh banana.

It also matches amazingly well with other fruits, like berries and chopped peaches, with chocolate chips, graham crackers, mini pancake cereal, or coconut flakes.

Ingredients

  • 1 banana, sliced
  • ½ cup natural peanut butter
  • ½ cup plain Greek yogurt

Instructions

Blend:

  • Combine the peanut butter and yogurt in a blender. Blend until smooth.*
  • Add the banana slices and blend just until smooth and no longer chunky.

Serve:

  • Pour into serving containers and refrigerate or serve immediately. If desired, top with roasted peanuts for crunch.
