Create sweeter moments with your kids by making these Bite-size PB&J Ice-Cream Sandwiches!!

To bring you this fun recipe, I’ve teamed up with Edy’s Slow Churned Simple Recipes light ice cream, the makers of today’s delicious flavor for these mini sandwiches: strawberry ice cream.

My kids love a good PB&J, and so does my husband. The mix of the salty peanut butter and sweet jelly brings a ton of comfort to the classic sandwich. When creating fun recipes using ice cream, and wanting to use strawberry ice cream, I couldn’t get past the idea of a frozen PB&J treat!

Create sweeter moments with your kids by making these Bite-size PB&J Ice-Cream Sandwiches!!

I also wanted to create a treat that the kids and I could do together, and as you can see in this quick video, it’s a terrific way to have fun in the kitchen.

Working together to create these mini ice cream sandwiches makes for happy and sweeter memories for years to come. I love taking the opportunity to talk to my kids while doing things they enjoy. And, what kid doesn’t like to help out when ice cream is involved?

What I love about using Edy’s Slow Churned Simple Recipes light ice cream for my recipes, is that it’s super creamy and free of artificial colors and flavors. And for this one, the strawberry swirl really adds an extra touch of sweetness to these mini sandwiches! If you live west of the Rockies, you may know this delicious brand as Dreyer’s!

Rich, creamy, delicious ice cream stuffed inside two sandwich cookies with one of our favorite flavor combinations… yum! The hardest part is not to eat them as they are made and to leave a few for everyone else to enjoy.

The sweetest moments with my family are always the times we plan on “doing nothing” together. It gives us space to be creative and just chill together. Our best moments usually involve all of us hanging out on the boat together and grilling at the beach. Sweet!

These would be the perfect little “sweet treat” after dinner that the kids would love making! 3 out of the 4 of our children have a peanut allergy, so we’d substitute with Sunbutter, but would be just as yummy! Love easy treats that are nut-free and the kiddoes can assemble themselves!

My husband is often away so it’s a lot of me and three littles. They are die hard popcorn and movie on the couch fans! They like to mix in a few sweets with the popcorn. Salty maple drizzled popcorn is our favorite flavor. Yum.

For my family I think the sweetest moments occur in the everyday, when I least expect it. Getting snuggles from my boys when they first wake up or when they get home from school. The times when I don’t have “expectations” of how are day should go. When we just enjoy life together by laughing, snuggling, dreaming and crying together. Those moments are ones that leave imprints on my heart.

Our family creates sweet moments together by spending time outside exploring the beauty around us and getting active. Our last family photo was taken 6 years ago in a studio. It is long overdue for a new one. We would hopefully take one outside this time.

In the summer, we have a special tradition that my son created called Sundaes on Sunday. Yup, every Sunday during the summer, we eat ice cream sundaes… we make them ourselves at home, so they are a little less decadent than if we went out for them. 🙂

We try to create sweet moments in the every day…cuddling in the chair to read a story before rest, pulling out some water balloons in the backyard on a hot afternoon, having a surprise treat after supper, family movie night with movie theater popcorn.

We as a family, we have become so much focused on time together and “experiences” vs. gifts, parties, etc. We have enjoyed a wonderful summer of trips, spontaneity and exploration, seeing many things for the first time in our own backyard. It was a sad 1st day back to school for us, realizing that our summer time together had come to an end. Now, it will be rush, rush, rush and hopefully meeting together around the dinner table a couple of nights each week!

I think any time you can spend quality time with your family, beyond the craziness of the week, you’ve got a ‘sweet moment’. My boys (twins, age 3) love to help in the kitchen – mixing, pouring, scooping… whatever the chore may be – they are always amped to be my assistants! This past weekend, we made Rice Krispy treats and they used cookie cutters to cut out different shapes. So much fun… and they got a chance to practice with learning their shapes too! (but shhh – don’t tell them it was educational)
