Can You Eat Quesadillas for Breakfast?
Only second to breakfast tacos, these breakfast quesadillas are another savory breakfast recipe my family loves. Nutritionally, eating one of these for breakfast is just like eating scrambled eggs and toast or an omelet and toast for breakfast.
Egg and cheese quesadillas are a protein-rich breakfast idea you can customize and turn into a filling meal with plenty of protein in a vessel (the tortilla) that both kids and adults enjoy.
Are Breakfast Quesadillas Healthy?
Quesadillas are a terrific filling breakfast that includes both protein and carbohydrates. Plus, you can add more nutrition by adding veggies to round up the meal.
Ingredients
Start out with the basic egg and cheese quesadilla and add the rest to build an epic breakfast quesadilla. You’ll need:
- Eggs: they’ll be scrambled and cooked with the other add-ins and they make the main filling for these quesadillas.
- Shredded cheese: is it even a quesadilla without it? No. quesa is the start for queso which means cheese.
- Ham: for extra protein. Totally optional.
- Tomato: could be Roma, vine, grape, or cherry.
- Tortillas: use the large, burrito-sized tortillas, but the smaller flour tortillas work too.

How to Make Egg & Cheese Quesadillas
There’s no right or wrong way to make these egg & cheese quesadillas with all the epic add-ins. Here are some tips for each step:
- Mix and scramble
Whisk the eggs in a separate bowl so when you ad them to the pan they’re nice a cohesive. Add the tomato and ham if using and cook them into the scramble. - Make the quesadilla
Warm up one tortilla, flip it over, add the cheese. Once the cheese is melted, top with the eggs all around. Top with a little more cheese and then the other tortilla. - Flip
When the bottom tortilla is nice and golden brown, it’s time to flip it and cook the other side until the cheese is melted and nice and crispy. - Serve
Remove the quesadilla from pan onto a cutting board and with a pizza slicer or large knife, cut it into triangles.

Healthy Breakfast Quesadilla Add-Ins
Treat these breakfast quesadillas like an omelet, meaning you can add any of your favorite ingredients into or on top of the scrambled egg mixture. Here are a few ideas to get you started:
- Chopped spinach: ½ cup
- Black olives: ¼ cup
- Salsa: 2 tablespoons in the egg mixture
- Avocado: dice it, or slice it
- Any leftover cooked veggies: up to ½ cup
- Chopped deli turkey: 4 slices (4 ounces)
- Bacon bits: 2 tablespoons
- Breakfast sausage: ¼ cup cooked
Can You Make Breakfast Quesadillas Ahead?
You can make breakfast quesadillas ahead of time similar to making freezer breakfast burritos. Scramble the eggs and other ingredients first, place the tortillas on a flat surface and fold them in half. When you’re ready to eat the, you simply grill them or cook them to reheat and melt the cheese.
What to Serve with Breakfast Quesadillas
These are fantastic on their own, but I often whip up some easy guacamole to serve on top, cook up some bacon in the microwave real quick, a fruit salad, or some simple berries.
Egg & Cheese Breakfast Quesadillas

Ingredients
- 3 eggs
- 4 oz ham, cubed
- 1 small Roma tomato, diced seeds removed
- ½ cup cheese
- 2 large tortillas
Instructions
- In a large bowl, whisk the eggs. Add the ham and diced tomato, and mix.
- Heat a non-stick pan over medium-high heat. Once hot, spray or grease and pour the egg mixture. Cook the eggs until firm, and set aside.
- Heat a griddle or a large pan over medium heat. Place one tortilla on the pan, and sprinkle half of the cheese on the tortilla. Once the cheese has melted, top with egg scramble, sprinkle with remaining cheese, and top with the second tortilla.
- When the bottom tortilla has begun to brown, flip and brown the other side for about a minute, long enough to melt the cheese.
- Remove from the pan, slice into four or six triangles, and serve.
