As a morning runner, I enjoy breakfast recipes that are nutritious and provide my body with complex carbohydrates that can fuel my body; and this sweet potato oatmeal recipe is one I make on repeat.
I usually have baked sweet potato leftovers from dinner that I repurpose into sweet potato hummus or use to make this breakfast the next morning. You can also use store-bought mashed potatoes and save time!
This oatmeal recipe takes 5 minutes to cook and makes a healthy breakfast that keeps you full for hours. And let’s talk taste! It’s super creamy, and the cinnamon adds a delish fall note you’re going to LOVE!

Whether you’re a fan of the larger old fashion oat flakes or use instant, use water or milk, the result from adding mashed sweet potatoes is a breakfast that’s more nutrient dense with plenty of fiber that will keep you full longer.
Ingredients
Follow the liquid-to-oats ratio and this sweet potato oatmeal will yield the best consistency! The measurements are in the recipe card, but first, check out what you need and the possible swaps:
- Oats: I love the texture of old-fashioned oats, but instant oats also work if you reduce the cooking time.
- Liquid: you can use water or any milk.
- Salt: just a pinch to enhance the flavor.
- Mashed sweet potato: cooked leftovers or store-bought mashed potatoes.
- Cinnamon or pumpkin spice: choose your favorite to infuse this oatmeal with delish flavor.
- Brown sugar: for a slightly sweet topping. You can omit it!

How to Make Sweet Potato Oatmeal
Making sweet potato oatmeal is just as simple as cooking plain oatmeal on the stove, so here are my tips and highlights about each step:
- Prep
If you have sweet potato leftovers, mash them to make them creamy. You can omit this step and use sweet potato pureé or baby food mashed potatoes. - Cook
Combine oats with milk or water in a small pot and, after 5 minutes (or 2 if you’re using instant oats), add the mashed sweet potatoes. You want the oats to absorb the liquid and the potatoes fully incorporated and heated. Stir with the spatula to dissolve any lumps. - Spice it up!
Add cinnamon or pumpkin spice to the mix before serving so all the oats absorb the flavor. - Serve
Serve, sprinkle cinnamon or brown sugar for extra flavor, and enjoy the best sweet potato oatmeal!

Creamy Sweet Potato Oatmeal (Stovetop)

Ingredients
- 1 cup old-fashioned oats
- 2 cups milk, any
- Pinch salt
- ½ cup mashed sweet potato
- ¼ teaspoon cinnamon or pumpkin spice
- 2 teaspoons brown sugar, optional for topping
Instructions
Prep:
- Scoop ½ cup of sweet potato onto a plate and with the back of the fork, mash it up very well to break up any large pieces. You can also use cooked mashed potatoes or 4oz baby food mashed potatoes.
Cook:
- Add the oats and the milk into a small pot and cook, over medium heat, stirring constantly for a total of 5 minutes*. When the mixture is hot, add the mashed sweet potato and stir it into the oats. Continue mixing the oatmeal for another minute until the oats have absorbed the liquid and the sweet potatoes are warm and fully incorporated into the oatmeal. Sprinkle cinnamon or pumpkin spice over the oatmeal and stir.
Serve:
- Divide the oatmeal into two bowls, sprinkle brown sugar (if using) and additional cinnamon for flavor.
