Chocolate Almond Popcorn

It's true, when I am not packing school lunches or making delicious family-friendly dinner ideas, I'm crafting up recipes for a cookbook or a "future project." This Almond Joy Popcorn recipe came naturally. 

I love popcorn, I love chocolate, I love coconut, and, well, you get the picture. After making this easy homemade almond joy, I have to turn it into popcorn! Every bite has the perfect balance of sweet, salty, and delicious.

This recipe includes white chocolate, so if you’re a sucker for it, you need to try this White Chocolate Popcorn recipe I usually serve during the holiday season, but I love to enjoy it all year round!

Ingredients

This fun recipe combines popcorn with everything we love about almond joy! Here’s what you need to know about the ingredients:

  • Popcorn: you can use microwave-popped popcorn, store-bought, or air-popped. If you want to use the microwave but ditch the not-so-good-for-you chemicals in the bagged kernels, check out how to make your own microwave popcorn bags!
  • Dark chocolate almonds: we need them to turn this popcorn into almond joy!
  • Shredded coconut: so delicious and adds classic almond joy flavor.
  • White chocolate chips: make this popcorn even more epic!

How to Make Almond Joy Popcorn  

After you see how easy this almond joy popcorn is to make, you'll never buy bagged fancy popcorn again. Check out the process:

  1. Prep
    Pop the popcorn and roughly chop the almonds.
  2. Combine
    Spread the popcorn on a cookie sheet. Sprinkle the almond chunks and the coconut over it.
  3. Melt the chocolate chips
    Melt it in the microwave at 20-second increments to keep it from burning. Once melted, drizzle it over the popcorn.
  4. Let it rest
    Allow it to harden before breaking it into chunks.

Ingredients

  • 5-6 cups popcorn, popped (about 1 bag if using microwave bags)
  • ½ cup dark chocolate almonds
  • ½ cup shredded coconut
  • ¾ cup white chocolate chips

Instructions

Prep the popcorn:

  • Pop the popcorn in the microwave, on your stovetop, or air-pop.
  • Spread the popcorn on a cookie sheet.

Combine:

  • On a cutting board, roughly chop the almonds. Sprinkle the almond chunks over the popcorn. Then, sprinkle the coconut on top.

Melt the chocolate:

  • Melt the white chocolate chips in a microwave-safe bowl at 20-second increments, stopping to stir, until completely melted (be careful not to burn the chocolate!).
  • Using a fork, drizzle the melted chocolate over the popcorn.

Let it harden:

  • Allow popcorn 30 minutes to 1 hour to harden.

Serve:

  • Break into chunks, serve in a bowl, or store in an airtight container.
