On hectic mornings, you need quick and convenient breakfast ideas. I know firsthand how easy it is to reach for a pre-packaged sugary breakfast bar and call it a meal. The sugar crash after those bars is real though, and they always leave you feeling hungry 20 minutes later. There is a better way my friends.

These blueberry breakfast cookies are super easy to make and prep ahead for hectic mornings. They are just as convenient as store-bought bars or grab-and-go blueberry banana muffins, while also being filled with nutrients that will keep you and your family going until lunchtime.

Ingredients

The best part about these breakfast cookies is that the ingredients are all-natural and have zero added sugars so this is one cookie you can feel really good about enjoying. The amounts are in the printable recipe card, but first, are you ready to see what they’re made of? Here’s what you need:

  • Blueberries: you can use fresh or frozen blueberries.
  • Bananas: add consistency and natural sweetness. The riper, the sweeter!
  • Applesauce: to bind the ingredients. An egg + 1 tablespoon of water make a good swap if you don’t have applesauce around.
  • Vanilla extract: delicious cookie flavor!
  • Old-fashioned oats: for chewy cookies! Quick and instant oats don’t work for this recipe.

How to Make Banana Blueberry Breakfast Cookies

What I love about this recipe is that it comes together in a single bowl and the oven does the rest! You can prep the batter the night before and bake them while everyone is getting ready.

They are terrific slightly cooled down because the blueberries are gooey like jam, or, they can be eaten cold straight out of the fridge. Ready to make these breakfast cookies to have on hand? Let’s do this!

  1. Prep
    Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. Mash & Mix
    Mash the bananas with a fork inside a medium bowl. Add wet ingredients and stir to combine. Mix in the oats and combine until you have a thick batter.
  3. Fold
    Pour blueberries into the batter and gently fold to combine.
  4. Scoop
    Use a cookie scoop or large tablespoon to scoop the batter onto the prepared baking sheet. Press the dough with the back of the spoon to flatten the cookies.
  5. Bake
    Bake cookies for 20-25 minutes until the cookies are light, golden brown.

Ingredients

  • 2 ripe bananas
  • ½ cup applesauce*
  • ½ teaspoon vanilla extract
  • 1 ½ cups old-fashioned oats
  • ½ cup blueberries

Instructions

Prep:

  • Preheat the oven to 350F and line a baking sheet with parchment paper.

Make the batter:

  • In a medium bowl, mash the bananas with a fork. Add the applesauce and vanilla, stir to combine. Mix in the old-fashioned oats and thoroughly combine until you have a thick batter.
  • Gently fold in the blueberries.

Make the cookies:

  • Using a cookie scooper or large tablespoon, scoop the batter onto the lined baking sheet, gently press the dough with the back of the scoop or spoon, to flatten the cookies.

Bake:

  • Transfer the baking sheet into the preheated oven and bake for 20 to 25 minutes or until the cookies are a light, golden brown.

Notes

*You can substitute applesauce for 1 egg + 1 tablespoon of water.
