Apple Cinnamon Overnight Oats – Easy Fall Breakfast

Oats are a staple breakfast in my household, and we use them for savory dishes, baked oatmeal, and even homemade instant oatmeal packets. Since my kids love the apple and cinnamon flavor in instant oatmeal, today I'm recreating those same flavors into a healthy overnight oats recipe.

Like my cinnamon apple bread and my cinnamon apple muffins, these overnight oats taste like fall but without baking involved. Amazing!

Ingredients

Use any apple you have on hand: Pink Lady, Granny Smith, Honey Crisp, and Gala taste amazing in this recipe. You’ll also need butter or coconut oil to cook the apple, ground cinnamon, maple syrup or honey for sweetness, old-fashioned oats (large flakes keep their texture and don’t get too mushy), and your favorite regular or non-dairy milk.

Overnight Oats to Liquid Ratio

To make perfect overnight oats, you'll need the right liquid-to-oats ratio. This is, in part, affected by the type of oats you use to make them. The ratio for this recipe using old-fashioned oats is ½ cup oats + ¾ cup liquid. In case you want to use steel-cut oats, the oats to liquid ratio is ¼ cup steel-cut oats + ½ cup liquid.

How to Make Cinnamon Apple Overnight Oats

You can either make one batch of overnight oats in a large bowl or prep individual 8-ounce jars. Here's how to make this fall breakfast:

  1. Dice the apple into even-sized, small cubes so they cook fast. Peeling is optional.
  2. Cook the apples with cinnamon in a pan for 3 to 5 minutes to soften them. Add in the maple syrup at the end.
  3. Combine the oats with milk and top with the cooked cinnamon apples.
  4. Refrigerate 8 hours or overnight.
  5. Enjoy these oats cold or warm them in the microwave for 30 seconds.

How Long do Cinnamon Apple Overnight Oats Last?

Overnight oats usually last in the refrigerator for up to 5 days. Not only will you have a delicious breakfast you can grab and go; it gives the oats more time to soak up all the flavors of the cinnamon, apple, and vanilla.

Ingredients

  • 1 tablespoon unsalted butter, or coconut oil
  • 1 Granny Smith apple, peeled, cored, and diced
  • 1 tablespoon ground cinnamon
  • 2 tablespoons maple syrup
  • 2 cups old-fashioned oats
  • 3 cups milk, any

Instructions

Cook the apples:

  • In a large non-stick pan over medium-high heat, melt the butter. Add apples and cinnamon and cook stirring, for about 3 to 5 minutes until they have softened. Once the apples are soft, add in the maple syrup and turn off the heat.

Assemble:

  • Fill each jar with ½ cup oats and ¾ cup milk, and stir. Divide the cooked apple mixture evenly inside each glass jar. Stir to combine and top with the lid.

Refrigerate:

  • Refrigerate 8 hours or overnight.

Serve:

  • Enjoy cold or warmed up for 30 seconds in the microwave.
