What is Cucumber Salsa
Cucumber salsa has similar flavors and ingredients to pico de Gallo but with a lot more crunch from diced cucumbers. I grew up eating this delicious recipe in Spain, where tomatoes and cucumbers are abundant all summer long.
It’s perfect with some chips, some chunky avocado salsa, and a Skinny Margarita for happy hour or the fresh topping your seared chicken breasts or fish tacos are begging for to be turned into a meal.
Ingredients
You will enjoy tons of flavors once you make this cucumber salsa. The ingredient measurements are at the end of the post, but first, check what makes this recipe so yummy:
- Cucumber: the MVP of this recipe. Use English cucumbers (seedless), Persian cucumbers, or traditional salad ones.
- Tomatoes: I use grape or cherry tomatoes, but you can use 2-3 Roma tomatoes too.
- Jalapeño: with or without seeds, and totally optional if you want a little heat.
- Shallot: a crucial ingredient in most salsa recipes.
- Fresh cilantro: a classic salsa ingredient!
- Lime: fresh lime juice adds the citric note this salsa needs.
- Salt and black pepper: for seasoning.
How to Make Cucumber Salsa
If you can chop and mix, then you can prep this ridiculously tasty cucumber salsa. Easy peasy!
- Chop
Chop all the ingredients and add them to a bowl with a knife or use one of these veggie choppers to make the job go quick! - Combine
Toss the chopped fresh ingredients with lime juice and a little salt and pepper for an epic salsa. Keep it refrigerated until ready to use.

Make it Spicier
If you are a proud member of the spicy team, you can add more heat to this amazing cucumber salsa adding more of the jalapeño and keeping the seeds, since that’s where the heat is!
Storing Leftovers
Leftovers can be stored in an airtight container or covered with plastic wrap in the fridge for up to 2 days.
How to Serve Cucumber Salsa
Cucumber salsa can be served on top of any protein as a healthy side dish or by adding some tuna and turning it into a salad. It’s a fresh topping to simple oven chicken kabobs, pan seared chicken thighs, or inside these chicken pita wraps.
Easy Cucumber Salsa

Ingredients
- 1 seedless English cucumber, chopped
- 1 cup grape or cherry tomatoes, halved
- 1 small shallot, chopped
- ½ jalapeño (optional), finely chopped
- ½ bunch fresh cilantro, chopped
- 1 lime, juiced
- ½ teaspoon salt
- Pinch black pepper
Instructions
- Chop all the fresh ingredients and add them into a medium bowl.
- Squeeze the lime over the bowl, season with salt and pepper, and toss to combine.
- Refrigerate the salsa until ready to serve, for up to 2 days.
