Easy Entertaining: Roasted Chicken Flatbread Bar

This roasted chicken flatbread recipe is perfect for easy entertaining. It has all the Mediterranean flavors and a bonus hummus dressing recipe.

I had no  idea what “tailgating” was until I married a Southerner. And then, I had to learn all about tailgating food. I’m quite sure it’s considered its own food group around these parts. Anything that fits in the pit is game. And then there are dips, and sauces, and chips, and well… lots of glorious food.

This roasted chicken flatbread bar is one to add to any tailgating menu. You can roast the chicken, barbecue it, even smoke it! But once it’s cooked… the food is on!

This is exactly what I envision easy entertaining food to be. Food that can be made ahead of time, needs little maintenance throughout a party, and allows the guests to customize their serving to their liking. Of course, this also makes the best mid-week family meal! Pick up a rotisserie chicken at the store and you are good to go!

I cook whole chickens nearly every week. You could say, it’s a staple in my weekly meal plan. The recipe possibilities are endless and having roasted chicken in the fridge allows me to prepare a meal in record time! I can make soups, quesadillas, tacos, pasta bakes, burrito bowls, nacho trays, and of course, I can repurpose it for lunch!

I also used one of my favorite ingredients in a non traditional way for this recipe. Hummus dressing! Whoa. I did just say hummus and dressing in the same sentence (although I’m pretty sure my 3rd grader would correct me and say it’s an incomplete sentence). Anyways,  have to try it.

Since I’m a go-big or go-home type of gal, I had to make sure I didn’t serve a plan chicken flatbread to my guests. I’ve got toppings! I love using all the other awesome mediterranean flavors like Feta cheese, kalamata olives, cucumbers, tomatoes, an olive oil. I made a quick cucumber + tomato + onion salsa to give these a little crunch. There is no recipe really. Just mix cucumbers, cherry tomatoes, a little red onion in a bowl. Drizzle it with olive oil and a little of your favorite Italian seasoning. Viola! crunchy salsa.

Ingredients

  • 1 whole smoked, barbecued, or roasted chicken, shredded
  • 6 whole grain flat breads
  • 10-12 whole romaine heart leaves, washed
  • 6-8 ounces kalamata olives
  • 8 ounces crumbled feta cheese
  • 1 batch creamy hummus dressing

Tomato-Cucumber Salsa:

  • 1 pint cherry tomatoes, quartered
  • 1/2 small red onion, finely chopped
  • 1 medium cucumber, ends cut and diced small
  • 1 tablespoon lime juice
  • 1/4 teaspoon dill (or Italian seasoning)
  • Olive oil, drizzle
  • salt, to taste

Instructions

  1. On a flat surface, shred chicken meat using two forks. Discard bones.
  2. Place remaining ingredients in their own dishes in an assembly line on the table.
  3. To assemble: hold your flatbread on your hands or on a plate. Place romaine leaves as the base to hold your chicken. Top with olives and feta cheese, drizzle with about a tablespoon of hummus dressing.

For Salsa:

  1. In a medium bowl, combine all ingredients. Drizzle with a little olive oil and add a little salt to taste.

Creamy Hummus Dressing

  • Author: Laura Fuentes
  • Yield: approx 3/4 cup

Ingredients

  • 1/2 cup Sabra Classic Hummus
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon water
  • Salt and pepper

Instructions

  1. Whisk hummus together with lemon juice and water; season with salt and pepper. Add an additional tablespoon of water if the dressing is too thick for your liking.

I just had a super delish macaroni and cheese recipe made on a big green egg last night. It was amazing! I have the recipe, now I just need the Egg.

As far as hummus, I love it spread on a wrap with roasted vegetables and feta cheese. Way yummy!!!!

I have a pretty mean grilled chicken recipe passed down from my mom but we also like to do salmon on the grill!! I actually really enjoy using hummus as a mayo substitute on my sandwiches. The best grilled chicken I recently had was while in Mexico: they surprised us with the Half chicken grilled to perfection, juicy and flavorful, and not a bit hot. I;d go back for it if not that far 🙂

The most common thing we grill is chicken kabobs and veggies.
Generally, I use hummus for dipping but I do like to spread it on a tortilla and roll it up with lunch meat and cheese occasionally.

I’ve never tried using hummus other than a dip with pita bread or vegetables. I’ll have to use as a substitute for mayo on wraps. I do like to add a bit of olive oil, lemon juice and paprika to my hummus.

I like to spread hummus on celery instead of peanut butter, but probably my favorite use for it is to use it as the “glue” on sandwiches and wraps instead of heavy mayonnaise. As for roasted chicken… I love it! Of course it’s great on its own, great shredded into salads, great on a cold sandwich… I love the extra flavor that roasting it gives to chicken soup instead of just boiling it. I also like to make chicken salad out of roasted or smoked chicken.

As for hummus, I really only dip it. I’m not a fan of it with bread, as we eat gluten-free, so a sandwich is too chalky and dry tasting for me with hummus on it… I haven’t tried a hummus wrap yet though.

A big green egg! We would throw everything on that bad boy! But the thing i would most like to try is pizza. We are the notorious ‘grill killers’ among our family and friends. We are lucky to get 2 years out of a grill, sometimes less. It’s because we demand such high temps in order to try and recreate authentic brickoven pizzas. The Egg would be ideal for this purpose!

If I won the egg, I wouldn’t do anything with it. My HUSBAND would probably take over the menu planning and cook out every night. I’m sure we’d be making dinner for our whole neighborhood and family all the time. Now that the weather is looking more like spring, I would be outside playing with my son while my husband cooks for us. Now that’s the dream!

Right now, we just have a little charcoal grill. It does well for flipping burgers on occasion but really can’t handle much more.
