Overnight Oatmeal with Almond Butter
While I have a thing for overnight oats and have created several variations, this recipe with almond butter and banana remains among my favorites. It's rich in healthy fats and fiber, keeping you satiated for hours while providing that blissful combination of popular oatmeal add-ins.
Unlike banana overnight oats, what I love about this particular recipe is that there is no cooking required, just a quick assembly line of ingredients.
What You’ll Need
The oats that work best for this recipe are old-fashioned oats. Then, you’ll need ground flax to thicken the mixture, almond butter, honey (optional for sweetness), a mashed banana, and almond milk (or regular dairy milk).

How to Make Almond Butter Overnight Oats
Here’s how to make this delicious breakfast:
- Fill the jars with oats, flax, almond butter, and honey (if using).
- Mash a banana and divide it between the jars. Pour the milk over the oats and give everything a good stir.
- Refrigerate the oats for at least 4 hours or overnight.
- Enjoy the oats cold or warm them in the microwave for 30 seconds to a minute.
These overnight oats last 3 days in the fridge; after that, the banana will get a little too mushy. However, overnight oats made without fruit can last up to 5 days. If you want this recipe to last longer, leave out the mashed banana and add extra banana slices on top before enjoying.

Almond Butter and Banana Overnight Oats

Ingredients
- 2 cups old-fashioned oats
- 2 teaspoons ground flax, optional
- 3 cups milk, your favorite
- 2 teaspoons honey, optional
- 4 teaspoons almond butter
- 1 banana
Instructions
Assemble:
- On a flat surface, place 4 bowls or lidded glass jars. Fill each with ½ cup oats, ½ teaspoon ground flax, ¾ cup milk, ½ teaspoon of honey (if using), and 1 teaspoon of almond butter.
- Peel and mash the banana. Divide mashed banana into the four bowls or jars. Pour the milk over the banana and oat mixture and combine with a spoon.
Refrigerate:
- Refrigerate for 4 hours or overnight.
- When ready to eat, enjoy cold or warm up for 30 seconds in the microwave.

Love this oat recipe…but as I’m Scottish I should like my porridge huh! And I do!
As far as using honey…I use it like most of the others…but my favourite is to fool my grandkids with their smoothies! They are a 2 year old, and almost 4 and I can put spinach…kale…sweet potato etc. in their smoothies and then add some honey and they guzzle it down! As a babysitting grandma…4 days a week, I do give them junk food too, and they love getting into grandma’s dark chocolate…but it’s all okay! They are my loves…my girls!
