Roasted Chicken Pieces
The great thing about baked chicken pieces is that the tray almost always has something for everyone. You can roast them on a tray or add potatoes to make roasted chicken pieces with potatoes in one pan, turning it into a full meal.
While my kids would love me to whip up some Cane’s chicken strips, roasting chicken is a much easier way to get a meal on the table quickly. I serve these with cottage cheese mac and cheese, roasted asparagus, or baked corn on the cob.
How to Bake Chicken Pieces in the Oven
If it’s your first time making this, watch the short video in the recipe card. Essentially, you’ll need to:
- Preheat the oven and grease a baking tray with oil.
- Trim any excess fat from the chicken pieces and generously season them with salt and pepper before placing them on a baking tray, skin side up.
- Make the marinade in a small bowl and pour it over the chicken. Cover the baking tray with foil.
- Bake for 30 minutes, then lower the temperature and cook for 20 more minutes until the dark pieces have reached 175F (80C) and the white pieces (breast) 165F (74C), then remove from the oven and serve.

What Temperature to Roast Mixed Chicken Pieces
Roasting chicken pieces between 375F and 400F is a great way to get crispy skins and juicy chicken meat that’s reached a safe-to-eat temperature of 165F for white chicken meat and 175F for dark chicken pieces.
How Long to Bake Chicken Pieces
For this recipe, you’re going to cook the chicken pieces for a total of 50 minutes. It’s important to base your cooking time on the internal temperature rather than solely on the cooking time listed in recipes, just to be on the safe side.
Tips for Best Baked Chicken Pieces
You’ll want to season the chicken before baking it, always after patting it dry with a paper towel. This helps the seasoning stick and helps get a crispy skin on baked chicken.
Baked Chicken Pieces (So Easy!)

Ingredients
- 1 whole chicken cut into parts, or 8 mixed pieces of bone-in chicken, thighs, legs, wings, breasts
- Salt, for seasoning
- 2 tablespoons olive oil
- 2 teaspoos garlic powder
- 1 tablespoon Italian seasoning
- 2 lemons
Instructions
Prep:
- Preheat the oven to 400F (205C), and position the oven rack one level up from the middle position (top third). Grease a baking tray with oil.
- Trim the chicken pieces of any excess fat and pat dry with a paper towel. Generously season the chicken pieces with salt and place them in the baking tray, skin-side up.
- In a small bowl, combine olive oil, garlic, Italian seasoning, and the juice of 1 lemon. Distribute the mixture generously over the chicken pieces. Cover with foil.
Bake:
- Once the oven is preheated, add the covered chicken pieces and bake for 30 minutes.
- After 30 minutes, remove the foil and reduce the oven temperature to 375F (190C). Cook for an additional 20 minutes.
- Remove from the oven to test the internal temperature, where dark chicken pieces have reached 175F (80C) and white (breast) 165F (74C). If ready, remove from the oven.
Serve:
- Remove the chicken pieces from the baking tray onto a serving dish and squeeze the remaining lemon over the top of the hot chicken pieces.
