Peanut Butter Banana Overnight Oats

These overnight oats with peanut butter and banana are a creamy, satisfying, and delicious way to start a new day!

Overnight Oatmeal with Peanut Butter 

For mornings when I crave the deliciousness of my peanut butter pancakes and the convenience of a portable jar of creamy overnight oats, nothing can beat these peanut butter banana overnight oats.

After seeing my family devour these chocolate & PB overnight oats, I decided to give a swap and use that sad, ripe banana in the fridge to add natural sweetness and extra fiber to our oatmeal.

Ingredients 

This breakfast is made with old-fashioned oats, a mashed ripe banana, peanut butter, milk, and a little vanilla for dessert flavor.

How to Make Peanut Butter Overnight Oats 

  1. Divide the ingredients between two jars. Stir to combine.
  2. Refrigerate for 8 hours or overnight to allow the oats to soak.
  3. Enjoy the oatmeal cold from the fridge or warm it up a little in the microwave.

Old-fashioned oats (rolled oats) are the best for overnight oats since they hold their texture better. While quick oats also work, they soften much more, resulting in a creamier consistency that’s almost mushy.

Other Healthy Mix-Ins 

Add more nutrition to your overnight oats with these tasty mix-in ideas:

  • Fresh fruit (½ cup) sliced or diced
  • Nuts, seeds, dried fruit: (1 teaspoon) for healthy fats
  • Flaxmeal, Chia, hemp seeds (½ - 1 teaspoon) add protein, fiber, and omegas
  • Protein powder (1 tablespoon) for extra protein

Ingredients

  • 1 cup old-fashioned oats
  • 1 ripe banana, mashed
  • 4 teaspoons peanut butter
  • 1 ½ cups milk
  • ½ teaspoon vanilla

Instructions

  • Place two jars on the counter and fill each with ½ cup oats, ½ of the mashed banana, 2 teaspoons of peanut butter, ¾ cup of milk, and ¼ teaspoon vanilla. With a spoon, stir to combine well and cover with a lid.
  • Refrigerate for 8 hours or overnight.
  • In the morning, stir to combine, top with your favorite toppings. Enjoy cold or warmed in the microwave for 30 seconds to 1 minute.
