Greek Hummus Stuffed Avocado
Did you know that avocados are one of my favorite things to eat for lunch? Oh yeah. Add hummus to it and now we are on to something. Seriously, if you haven't tried hummus stuffed avocado, you should. It is going to knock your socks off!
Hummus is a really great source of protein. Paired with avocado, which is a source of healthy fat, and fruit, a healthy carb, this lunch covers all bases! Also, this recipe is completely grain-free. Awesome, right? A healthy and fast work lunch is waiting for you!
Although you may not think of avocados as portable, this recipe makes avocados the main ingredient of your lunch. You assemble this meal in 5 minutes and pack it in a lunch container, as I’ll show you below. It’s that simple. Next step: devour it!

How to Make a Hummus Stuffed Avocado
Lunch ready in two simple steps? Yes! This Stuffed Avocado couldn’t be any better! Here’s how I make this meal happen:
- Slice the avocado
Slice the avocado in half, divide, and remove the pit. - Stuff it!
With a spoon, stuff each avocado half with hummus, and top with feta cheese and chopped kalamata olives.

Hi Marla, there’s really no way to prevent the exposed avocado part from browning.
