Bruschetta Salad Recipe

I like to think of this bruschetta salad as the Italian version of Pico de Gallo. While this salad recipe includes a little chopped red onion, you can leave it out if your family isn't a fan. The flavors will still be spot on!

Ingredients

To make this fresh salad, you’ll need cherry or grape tomatoes (heirloom, vine, and Roma also work), red onion, balsamic vinegar, olive oil, and fresh basil.

How to Make Bruschetta Salad

First, halve the cherry tomatoes, dice the red onion, and chop the fresh basil. Then, place them in a large bowl, drizzle with balsamic vinegar and olive oil, and toss to combine.

What to Serve with This Tomato Salad

Traditionally, bruschetta salad is topped over toasted bread, but you can serve it with baked chicken or baked fish, tossed with cooked pasta, added to cooked couscous, or over a meal-prepped salad.

Ingredients

  • 1 pint cherry tomatoes, halved
  • ¼ cup red onion, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • ½ cup fresh basil, chopped
  • ¼ teaspoon salt & pepper, to taste

Instructions

  • In a large bowl, combine the cherry tomatoes, red onion, balsamic vinegar, olive oil, and basil. Season with salt and pepper. Toss to combine, taste for seasoning, and serve.
  • Refrigerate any leftovers in an airtight container for up to 2 days.
