- Avocado: ripe avocados are what make this salsa epic.

- Cilantro: chopped really small.
- Fresh lime juice: adds a citrusy note while helping slow down the avocado’s oxidation process.
- Salt: a little is enough for seasoning.
Of course, you could bulk it up and stay true to those summery flavors by adding chopped tomatoes and cucumber. It will be more like a salad but works if you want it to be a stand-alone side dish.

This easy salsa comes together in one bowl. It is best assembled before serving to prevent the avocado from browning, but more details on that later.

- Dice the avocado
Halve each avocado and remove the pits. Score each half of the avocado using a knife and use a large spoon to scoop out the center into a bowl. - Toss to combine
Add the chopped shallots, cilantro, lime juice, and salt. Toss to combine, and voila! It’s ready to eat!

How to Keep Avocado Salsa Green
Keeping avocados from going gray/brown can be a bit tricky since you are working against time. However, you can preserve the vivid green color of this salsa by preparing it no more than 6 hours before serving and keeping it refrigerated.
To slow down the oxidation process you can also sprinkle the top of the finished salsa with additional lime juice and cover with plastic wrap, pressing the plastic firmly over the top of the salsa to remove excess air.
How Long Does it Last?
Avocado salsa will last in the refrigerator for up to 1 day. In the meantime, the avocado will brown, and the other veggies will be a little wilted but no less delicious.

- 1 small shallot, finely chopped or ¼ cup chopped red onion
- ¼ cup fresh chopped cilantro
- 3 tablespoons lime juice
