Rice Bowls with Buffalo Chicken
These buffalo chicken rice bowls taste incredible and it's everything you need in a meal, with tender chicken, fresh veggies, and rice, covered with smoky buffalo sauce and homemade Ranch #getinmybelly!
For the buffalo chicken, you won't find fried wings coated in electric orange sauce. While those are perfectly delicious, I prefer the lighter version with shredded chicken and buffalo sauce. I make chicken buffalo in the slow cooker effortlessly to get the perfect meal builder. You can also cook it on the skillet or toss rotisserie chicken meat with buffalo sauce and voilá!
Since I use this buffalo chicken in both dinners and lunches, I'll usually double or triple the recipe, to make sure there's enough to go around. You can also freeze the chicken in single-serve portions so if you want to save some for meals the following week; you're covered.

Ingredients
While I like to keep traditional buffalo chicken flavors like Blue cheese and Ranch, I thought fresh veggies would add a nice touch to the rice bowls. Check what you need:
- Rice: regular rice or cauliflower rice for a low-carb swap.
- Buffalo chicken: the slow cooker is my favorite method for cooking it, but you can also use rotisserie or pan-seared chicken.
- Avocado: adds tons of nutrition and creaminess.
- Cherry tomatoes: fresh and juicy!
- Red onion: a flavorful, crunchy addition.
- Crumbled Blue cheese: pairs amazingly well with buffalo chicken.
- Ranch dressing: my homemade recipe is super easy and tasty, but you can always use the bottled one.
Low Carb Buffalo Chicken Power Bowls
If you are watching your carbs or going paleo, use steamed cauliflower rice instead of regular rice. I’ve prepared these bowls with cauli rice for my office lunch, and it holds up great!

Make a rice base and top it with buffalo chicken, avocado, tomatoes, red onion, and blue cheese. - Drizzle

Ingredients
- 4 cups steamed rice, or cauliflower rice
- 2 ½ cups reserved Slow Cooker Buffalo Chicken, warmed
- 1 avocado, peeled, pitted, and diced
- 1 cup cherry tomatoes, halved
- ½ cup diced red onion
- ½ cup crumbled Blue cheese
- ½ cup Ranch dressing
Instructions
- In 4 separate bowls, divided the rice. Top with buffalo chicken, avocado, cherry tomatoes, red onion, and blue cheese.
- Drizzle each bowl with Ranch dressing and serve.
